I love eating raw garlic, fully believe it helped me get over a chest infection in 2 weeks (normally over a month for me). Helps you cough out all the nasties. If you're worried about garlic breath, eat a sprig or two of parsley right afterwards, stalk and all.

my grandfather was a cotton farmer. He spent his summers in the fields picking cotton. It was miserable, his childhood was miserable, everthing was dependent on weather conditions and crop yield. He said mark my words when I have kids they're going to college come hell or highwater.

Serious question: How do you know you aren't getting botulism when the bubbles form? They always say not to store garlic in oil or butter, i.e., an anaerobic environment, because the garlic could have the bacteria (?) in it from the soil, and botulism thrives in an anaerobic environment. When a can of food bulges, it's a sign of botulism contamination. So, how do you know that what's causing the bubbling is good fermentation rather than botulism...aside from trying it and dying? I'm asking not to hassle anyone but because I'd love to make this, but I'm not ready to die. ;)

In an earlier episode they talked about lowering the PH level in whatever they were making so that botulism couldn't survive, you can look up the range it lives in and just make sure your fermenting ingredients are in the safe zone.
