I get it that we need a cold bowl and cold cream. I can place the bowl in the freezer to chill but (sorry for the dumb question) do I have to place the cream in the freezer as well until it's frozen solid? Or is it okay to just refrigerate?
Good question -- DO NOT FREEZE the cream -- cold is what you need -- I'll sometimes get it even colder buy popping it in the freezer for a few minutes but the consistency will get grainy if it actually freezes -- don't freeze it. A really cold frozen bowl is fine though and helps bring it to a whipped state.
Can evaporated milk be substituted for whipped cream? I know some people substitute them when they have a mixer but i have no idea if it'll still work if it is mixed by hand. So will evaporated milk be more difficult to whisk by hand than whipped cream?
Yes, it will, it doesn't have the same thickness -- but if you try it, make sure it's super cold, as well as the bowl, and write me back! I'd love to hear how long it takes, and what the result is for you! Good for you if you try it!

Yes, it will depend how cold your bowl is, how cold the cream is, and how fast you whip, and how big your whip utensil is. a bigger whipping utensil is helpful! Thank you so much for your studying of the videos, I appreciate your info!!
