Ok, I'm making these right now. I lost my attachment to kneed the dough with my mixer, so I used my food processor. It was pretty hard to keep mixing the dough as it had the entire machine shaking all over the place. I guess it wouldn't take 5-6 minutes in a food processor...(hope not anyway.) So now it's sitting for two hours and I'm keeping my fingers crossed that it turns out.

He has a link to his blogpost in the description. There should be all the informations you need but just in case: you can use normal flour. Normaly i pack of yeast is enough for 500g of flour. But it may vary. It most likely is somewhere on the package to be found.

the only reason i never make dough stuff (bread pita pizzas or anything) on my own is the waiting ... i mean come on ... i have to wait 3 hour for this shit to rise and 1 for making baking it (if not more) ... i will just buy them ..

I followed this recipe and it didn’t work at all! What a disappointment! They did not puff at all and I wasted 4 hours making them! Don’t use a stovetop pan! Use an oven at 500 degrees Fahrenheit (260 C) and a pre-heated baking tray! Put the baking tray as close to your oven’s heat source as possible (usually on the bottom.) Cook for like 5 minutes on the first side, flip and cook for 2 minutes on the second side. You will thank me later.

A girl and her scale bake your pita bread in the oven for 500F (260 C) on a PREHEATED BANKNG TRAY. leave your baking tray in the oven to preheat as the oven in preheating. You will get them to puff. I had this problem too. The stovetop method sadly doesn’t work.

Chef John, huge fan here! You probably will never see this, but maybe someone else can help. I have made your Lebanese Mountain Bread recipe a couple times and I absolutely love it. This recipe is pretty much identical to the mountain bread except for two things: 1. You don't let the dough proof overnight 2. The thickness of the final bread itself Do these two factors make a huge difference in the taste between the mountain bread and the pita? If someone who has already tried both these recipe out could comment, I would really appreciate it.
