Okay...so I'm ready to sous vide a bone-in turkey breast...It's 8.5 lbs. How long should it be in?

I agree with the temp. If you go any higher, the texture won't be much different than roasting it in the oven. I did this last year. Added celery, onion, carrot, and fresh sage to the bag, and boy, that flavor was so cooked in. And suuuper juicy. Your turkey looks beautiful!

Terrific! You know, this was really my kids idea! They LOVE to sous vide!!!! They told me about it, and that breast piece was easy to find at the grocery store!
