Ultimate Homemade Pizza Makes 6 pies INGREDIENTS Dough 7 cups flour 4 tablespoons Kosher salt ½ teaspoon dry active yeast 4 cups water, at room temperature Semolina or cornmeal, for the pizza peel Extra flour, for shaping Sauce 6 ounces tomato paste 1 cup hot water 2 tablespoons red wine vinegar 2 teaspoons maple syrup or honey 1 teaspoon salt ½ teaspoon pepper 3 cloves garlic, minced ½ teaspoon dried oregano ½ teaspoon dried basil ½ teaspoon dried marjoram ¼ teaspoon cayenne pepper PREPARATION In a very large bowl, whisk together the dry ingredients. Make a divot in the middle of the flour mixture and add a few tablespoons of water. Stir with a wooden spoon, gradually adding more and more water until the dough starts to come together. You may need a tablespoon more or less water, depending on the consistency of the dough as it forms. Using your hands, ensure the dough is well incorporated, but do not knead. Be careful not to overwork the dough. Cover with plastic wrap and store at room temperature overnight, or for at least 12 hours, until doubled in size and porous. Make the sauce by combining tomato paste, water, vinegar, maple syrup, salt, pepper, garlic, oregano, basil, marjoram, and cayenne pepper in a medium bowl. Let sit at room temperature for an hour before canning or jarring. Refrigerate as necessary up to 2 weeks. Once the dough has risen, transfer to a clean, floured work surface and form into a large ball. Cut the dough into 6 equal parts and form dough balls by folding the corners into themselves. Place the dough balls on a floured sheet pan, sprinkle with flour, and cover with a damp towel for about 30 minutes to an hour. Preheat oven with a pizza stone in it to 500ªF (260ºC) or a low broil. Work each dough into a disk on a floured work surface. Knuckling the edges of the dough and tossing it gently will help thin it out. Be careful not to rip the dough. Place the dough disk onto a pizza peel generously floured with semolina or cornmeal. This will prevent sticking. Top with desired sauce, cheese, and toppings. Slide the pizza onto the stone and bake for about 9 minutes, watching carefully to make sure it doesn’t burn. Look for the edges to become charred and crispy and the cheese to bubble. Let the pizza cool for 5 to 10 minutes before cutting and serving. In a large mixing bowl, use a hand mixer to beat together butter and powdered sugar until light and fluffy. Add in vanilla extract and beat until combined. 2. Add in flour and mix just until flour disappears. Fold in mini chocolate chips. 3. Transfer dough to a gallon-sized resealable plastic bag, or place between two layers of plastic wrap. Roll until 1/4 inch thick. Refrigerate on a flat surface until firm, about 1 to 2 hours. 4. Remove dough from plastic and use a butter knife to cut into equal-sized squares or rectangles. Transfer cut pieces to a parchment lined baking sheet. 5. Bake at 325 degrees for 18-20 minutes, until edges are just lightly kissed with brown. 6. Melt dipping chocolate in a small microwave safe bowl by microwaving on high for 30 seconds at a time, stirring between. It makes for a sweet and crispy crust that just so happens to be gluten-free. How to Fry Chicken Chicken should be fried in a high smoke point oil like vegetable, canola, or peanut oil. The oil itself should be kept at about 350 degrees F for best results. Chicken should be dredged, dipped in a wash, and coated with a flavored outer coating before frying. Different cuts of chicken will require different cooking times. White meat requires less cooking than dark, and boneless cuts require less cooking time than bone-in. Size also plays a factor with smaller cuts requiring less cooking time. Chicken needs to be cooked to an internal temperature of 165 degrees Fahrenheit. Use a meat thermometer for best results. INGREDIENTS 1 tablespoon cajun seasoning 6 chicken breasts 2 cups Captain Crunch cereal 1 cup cornstarch 2 cups water 2 eggs 1 quart vegetable oil INSTRUCTIONS 1. Season both sides of chicken breasts with cajun seasoning. 2. Blend Captain Crunch cereal in a blender or process into a food processor until crumbs. 3. Pour cornstarch into a shallow dish. In another shallow dish whisk together water and eggs. In a third shallow dish spread out cereal crumbs. 4. Working one at a time, roll a piece of chicken into the cornstarch to coat. Dip into egg mixture, and then roll in crumbs. Place onto a wire rack to dry for 10 minutes. 5. Meanwhile, heat oil in a large pot to 350 degrees F. 6. Working in batches, fry chicken for about 10 minutes, until brown and crispy and chicken reaches an internal temperature of 165 degrees F. It's decadent, rich, and absolutely delicious! ________________________________________­↓↓↓↓↓↓ CLICK FOR RECIPE ↓↓↓↓↓↓↓↓ _______________________________________ How to Make S’mores Pie From Scratch INGREDIENTS GRAHAM CRACKER CRUST 1 1/2 cups graham crackers, finely ground 1/3 cup sugar 6 tablespoons butter, melted FUDGE FILLING 1/2 cup salted butter 2 cups granulated sugar 2/3 cup milk chocolate chips 1/3 cup unsweetened cocoa powder 1 (12 oz) can evaporated milk 1 teaspoon vanilla extract ITALIAN MERINGUE 1 cup sugar 1/2 cup water 4 egg whites 1/2 teaspoon cream of tarter INSTRUCTIONS CRUST Make your crust by mixing together the graham crackers, sugar, and melted butter in a small mixing bowl. Press into a pie plate. Bake at 375 degrees for about 6 minutes. FUDGE FILLING In a medium saucepan combine butter, cocoa powder, chocolate chips, sugar, and evaporated milk. Stir to combine over medium-low heat. Increase heat to medium-high and bring to a boil. Immediately reduce heat to low and continue simmering for 7 minutes, stirring constantly. Remove from heat and add vanilla. Pour the mixture into a blender and blend the mixture for 2 whole minutes. Pour into the prepared pie crust and cool completely. ITALIAN MERINGUE In a small sauce pan, stir together sugar and water over medium high heat. Let it sit until it reaches 240 degrees F. Meanwhile, add egg whites and cream of tarter to a mixing bowl or stand mixer. Beat until soft peaks form (peaks that collapse back on themselves and do not yet hold their own shape). While mixing, slowly pour in hot sugar mixture and continue beating until stiff peaks form. Spread meringue on top of the fudge layer of the pie crust. Use a kitchen torch to brown the peaks of the meringue or place underneath the broiler setting in your oven to broil until browned. Keep a close eye so it doesn't burn. Thanks for watching! Preheat oven to 375 degrees. Line a 4 sided baking sheet with aluminum foil. Place the salmon in the middle of the foil. 2. Pull the sides and ends of the aluminum foil up and pinch together, covering the salmon completely. 4. Bake in the preheated oven for 15-20 minutes, or until the salmon flakes easily with a fork. There are a couple of important times and temperatures to keep in mind. Your turkey is safe to sit out at room temperature for a total of 4 hours. These 4 hours will include both before and after roasting as well as serving. This means it is completely safe for your turkey to sit out with the breasts under ice packs in order to chill the white meat and still leave you with 3 hours to work with to get your turkey into the oven, rested, and served. The second safety number to keep in mind is that turkey meat is safe to eat when cooked to an internal temperature of 150 degrees if maintained for at least 5 minutes. Since our turkey will continue to maintain that temperature, and will even go up in temperature during the resting period, it is 100% safe to cook your white meat to only 150 or 155 degrees Fahrenheit in the oven before letting it rest. 🍴🍴🍴🍴🍴🍴🍴🍴🍴 INGREDIENTS 1 whole turkey 1 cup salted butter sliced 2 teaspoons paprika 2 teaspoons ground oregano 2 teaspoons ground basil 2 teaspoons salt 1 teaspoon black pepper 1 teaspoon onion powder 1 teaspoon garlic powder INSTRUCTIONS 1. Use an instant read thermometer to test the internal temperature of the turkey to make sure that no part of it is frozen. Internal temperatures should be above 32 degrees F. Remove the turkey from its packaging and place onto a roasting pan. Discard neck and gizzards. 2. Fill two plastic sandwich bags with ice. Clip them together and place them on the bird so that the ice can chill both breasts. Let sit at room temperature for 1 hour, then discard ice bags. Preheat an oven to 350 degrees. 3. Starting at the neck cavity, loosen the skin from the breast and drumsticks by inserting fingers and gently pushing between the skin and meat. Place slices of butter in between the skin and the meat. 4. In a small bowl, stir together paprika, oregano, basil, salt, pepper, onion powder, and garlic powder. Sprinkle over the skin of the entire turkey and rub in to coat. 5. Insert an oven safe thermometer probe so that the tip of the probe is in the center of the breast of the turkey. The probe should be inserted from the neck area and be parallel to the roasting pan. 6. Bake in the preheated 350 degree oven until the internal temperature of the breasts reaches 150-155 degrees. Baste 1 to 2 times if desired. 7. Use an instant read thermometer to test different parts of the bird for doneness and to ensure that the breast meat really is 150-155 degrees in the center. The dark meat in the legs should register between 175 and 180 degrees F. 8.Once the internal temperatures reach their desired level, let the turkey rest 20 minutes before carving. 🍴🍴🍴🍴🍴🍴🍴🍴🍴 Thanks for watching! Easy homemade Lemon Filled Doughnuts made completely from scratch. There's nothing better than a warm fresh donut! ________________________________________­↓↓↓↓↓↓ CLICK FOR RECIPE ↓↓↓↓↓↓↓↓ _______________________________________ How to make Homemade Jelly Filled Donuts 2 1/2 teaspoons instant dry yeast 1/2 cup warm water (approximately 100 degrees) 1/4 cup white sugar 1/4 cup evaporated milk 1/2 teaspoon salt 1/4 cup vegetable shortening 2 large eggs 1/2 teaspoon vanilla extract 2 1/2 to 3 cups all-purpose flour 2 tablespoons butter, melted 1 1/3 cups powdered sugar 1 pinch salt 2 teaspoons evaporated milk 1/2 teaspoon vanilla extract 2 to 4 teaspoons water 1 half-pint lemon curd (recipe below) INSTRUCTIONS Combine the yeast, water, sugar, evaporated milk, salt, shortening, eggs, and vanilla in the bowl of a stand mixer. Pour in 2 cups of the flour and knead on a medium-low speed with a dough hook until well combined. Slowly add in the remaining flour until a nice dough ball forms. Dough should be wet, but should not stick to your fingers or the sides of the bowl. Spray a large mixing bowl with nonstick cooking spray. Transfer the dough to the bowl, cover with a clean dish towel, and let rise 1 1/2 hours. Roll the dough out onto a lightly floured surface 1/4 to 1/2-inch thick. Use a drinking glass or round cookie cutter to punch out 12 donuts, re-rolling the dough as necessary to get a dozen donuts and use almost all of the dough. Let rise another 30 minutes. Meanwhile, heat the shortening in a large pot to about 350 degrees. While the shortening is coming to temperature, make the glaze in a medium-size mixing bowl by whisking together melted butter, powdered sugar, pinch salt, 2 tsp evaporated milk, and 1/2 tsp. vanilla extract. Add in water 1 tsp at a time until it is just thin enough to dip something in easily. It shouldn't be runny, but it shouldn't be thick either. Fry the donuts a few at a time until golden brown, flipping halfway through. It is helpful to do a test donut to ensure that the donut gets cooked through. Transfer the donuts to a wire rack covered with a layer of paper towels. Let cool for 1 to 2 minutes then dip the top of the donut into the glaze and place it back on the wire rack. Once all of the donuts have been fried, fill a piping bag with the lemon curd, like you would with frosting. Using a wide-mouth tip, insert the tip into the side of the doughnuts one at a time, squeezing to fill with 1 to 2 tablespoons of lemon curd per donut. EASY HOMEMADE LEMON CURD Ingredients 1 1/2 cups white sugar 1 cup freshly squeezed lemon juice 1 tablespoon lemon zest 12 egg yolks 1 cup butter Instructions Combine sugar, lemon juice, and lemon zest in a large saucepan over medium heat. Stir constantly until the mixture is hot, but not yet simmering. In a medium size mixing bowl, whisk the egg yolks until smooth. Slowly pour some (about 1/3) of the hot sugar mixture into the bowl, whisking constantly. Transfer all of the egg mixture into the saucepan, whisking to combine, over medium heat. Slice the butter into tablespoon-size slices and add into the hot mixture. Stir until butter is melted and mixture thickens. Pour through a mesh sieve into canning jars or a large bowl. The balance between layers of cheese, noodles, and homemade bolognese sauce is perfection! ________________________________________­↓↓↓↓↓↓ CLICK FOR RECIPE ↓↓↓↓↓↓↓↓ _______________________________________ The Most Amazing Lasagna Recipe INGREDIENTS 1 pound sweet Italian sausage 1 pound lean ground beef 1 large white onion, minced 5 cloves garlic, crushed 1 (28 ounce can) crushed tomatoes 2 (6 ounce can) tomato paste 1 (15 oz can) tomato sauce 1/2 cup chicken broth 2 tablespoons white sugar 1/2 cup chopped fresh basil 1 teaspoon fennel seeds 1 teaspoon ground oregano 1/2 teaspoon salt 1/4 teaspoon ground black pepper 1/4 cup + 2 tablespoons chopped fresh parsley (divided) 1 pound lasagna noodles 30 ounces ricotta cheese 1 large egg 1/2 teaspoon salt 1/8 teaspoon ground nutmeg 1 pound deli sliced mozzarella cheese 1 cup freshly grated Parmesan cheese INSTRUCTIONS 1. In a large pot over medium heat, add in ground sausage and ground beef. Use a spoon to break up the meat into small pieces. Add in onion and garlic and cook until meat is well browned, stirring constantly. Stir in sugar, fresh basil, fennel, oregano, 1/2 teaspoon salt, pepper, and 1/4 cup chopped parsley. Pour in crushed tomatoes, tomato paste, tomato sauce, and chicken broth. Stir well and bring to a simmer. Reduce heat to low and simmer 1-4 hours, stirring occasionally. 2. Meanwhile, place lasagna noodles into the bottom of a pan. Pour hot tap water directly over the noodles, making sure the pasta is completely immersed in the water. Let them soak for 30 minutes, then drain and discard water. 3. In a mixing bowl, combine ricotta cheese with egg, remaining 2 tablespoons parsley, 1/2 teaspoon salt, and nutmeg. Refrigerate until ready to assemble lasagna. 4. Preheat oven to 375 degrees. Lightly grease a deep 9x13 pan. 5. To assemble, spread about 1 cup of meat sauce in the bottom of the prepared pan. Place 4 noodles on top. Spread with 1/3 of the ricotta cheese mixture. Top with 1/4 of mozzarella cheese slices. Spoon 1 1/2 cups meat sauce over mozzarella, then sprinkle with 1/4 cup parmesan cheese. Repeat layering two more times to create three complete layers. To finish, place a final layer of pasta, topped with another 1 cup of meat sauce to cover the pasta. Top with remaining mozzarella and Parmesan cheese. Cover loosely with aluminum foil. 6. This cheesy peppery Italian pasta is a favorite for a reason. What kind of cheese should I use? Because this is a classic Roman dish, you should use a hard cheese from the Roma region of Italy when making this dish for the most authentic flavor. Pecorino Romano is the traditional choice. If you do not have pecorino Romano available to you, grated Parmesan is an acceptable substitute, though not an authentic choice as it comes from the Parma region of Italy. What kind of pasta should I use? The traditional choice of pasta for Cacio e Pepe is tonnarelli pasta, a thick round long pasta similar to a thick spaghetti or bucatini. Since these are both similar in shape, they both make acceptable substitutes where tonnarelli is not available. INGREDIENTS 1 pound tonnarelli or thick spaghetti pasta 1 tablespoon salt 1 1/2 cups freshly grated pecorino romano cheese 1 cup pasta water (approximate) 2 tablespoons freshly ground black pepper INSTRUCTIONS Bring a large pot of water to a boil. Add in salt. Cook your pasta until al dente. Remove cooked pasta from the water with tongs when finished and placed into a large mixing bowl. Working quickly, add in 1 1/4 cups pecorino romano cheese immediately, reserving the remaining 1/4 cup. Add in 1/2 cup of the pasta water and pepper. Stir with tongs quickly to allow the heat from the pasta and water to melt the cheese. Add remaining water until you have a thick, creamy sauce coating the pasta. This is the white cake you've been dreaming of! ________________________________________­↓↓↓↓↓↓ CLICK FOR RECIPE ↓↓↓↓↓↓↓↓ _______________________________________ The Most Amazing White Cake INGREDIENTS 1 cup salted butter, softened 1 1/2 cups sugar 2 teaspoons almond extract 3 1/2 cups cake flour 4 teaspoons of baking powder 1/2 teaspoon salt 6 large egg whites, room temperature 1 1/2 cups milk, room temperature INSTRUCTIONS 1. Grease three 9-inch pans. Line the bottom with parchment paper. Preheat an oven to 350 degrees F. 2. In a large mixing bowl, use a hand mixer to cream the butter and sugar together. Beat in almond extract. 3. Use a fork to combine the eggs and milk together in a bowl or 2 cup liquid measuring cup. Set aside. 4. In another mixing bowl stir together cake flour, baking powder, and salt. 5. Add 1/3 of the dry ingredients to the butter mixture and mix in until just combined. Add in half of the milk mixture and combine. Add in another 1/3 of the dry ingredients until combined followed by the remainder of the milk mixture. So delicious, and so much fun! I’ve chosen to make my lasagna cups using lasagna pasta sheets. If you need a fast, more simple option, you can always use wonton wrappers. Just slide one in the bottom and layer on meat sauce, cheese, and more meat sauce. You won’t get the same clean layers, but it would save you a few minutes. I still recommend spending the extra time to make the layers. This recipe calls for ground Italian sausage. If you don’t eat pork, or need to stay away from sausage for other reasons, you can always use ground beef in the same amount. I recommend using a lean ground beef like 93/7 to cut down on the grease. PRO TIP: Freshly shredded cheese melts a lot better than the pre-shredded bagged stuff you get in the grocery store. Why? Chemicals are added in with the pre-shredded cheese to keep it from clumping and sticking together as well as to prevent mold. These chemical interfere with melting. For best results, always use freshly shredded or grated cheese in recipes, particularly ones that involve melting. INGREDIENTS 1 package lasagna noodles ½ pound ground Italian sausage 3 cloves minced garlic 1 (15 oz can) tomato sauce 1 (6 oz can) tomato paste 2 teaspoons Italian seasoning 1 teaspoons salt, divided 15 ounces whole milk ricotta cheese ¼ teaspoon black pepper 1 cup shredded mozzarella cheese INSTRUCTIONS 1. Preheat oven to 350 degrees and lightly grease a standard size muffin tin. Cook lasagna noodles according to package directions. Cut 6 of them in half, lengthwise. Use a small cookie cutter to cut out 24 small circles from the remaining pasta. 2. In a large skillet, cook ground sausage until cooked through, and no longer pink, about 5 to 7 minutes. Add in garlic, tomato sauce, tomato paste, Italian seasoning, and ½ teaspoon salt. Bring to a simmer, then remove from heat. 3. In a medium size mixing bowl, stir together ricotta cheese, remaining ½ teaspoon salt, and pepper. 4. Line the bottom of each muffin cup with 1 of the cut out pasta circles. Curl each of the long strips into a ring to line the sides of each cup. Spoon about 1 tablespoon of sauce into the bottom of each muffin cup. Top with another layer of pasta circles and 1 tablespoon of ricotta mixture. Place remaining pasta circles on and another 1 tablespoon of meat sauce. Sprinkle mozzarella cheese on top. 5. Bake in the preheated oven for 12-15 minutes, until cheese is melted and bubbling and slightly browned. Serve hot. Thanks for watching! Butter three 9-inch cake rounds. Dust with flour and tap out the excess. (see cooking lesson below) Mix together flour, sugar, cocoa, baking soda, baking powder, and salt in a stand mixer using a low speed until combined. Add eggs, buttermilk, warm water, oil, and vanilla. Beat on a medium speed until smooth. This should take just a couple of minutes. Divide batter among the three pans. I found that it took just over 3 cups of the batter to divide it evenly. Bake for 30-35 minutes until the cake meets the toothpick test (stick a toothpick in and it comes out clean). Cool on wire racks for 15 minutes and then turn out the cakes onto the racks and allow to cool completely. Frost with your favorite frosting and enjoy! Notes The better quality cocoa powder you use the better the cake will taste. Chocolate Cream Cheese Buttercream Frosting Prep Time: 10 minutes Yield: enough frosting for a 3 tiered cake Ingredients 1½ cups butter, softened 8 oz cream cheese, softened 1½ cups unsweetened cocoa powder 3 teaspoons vanilla extract 7-8 cups powdered sugar about ¼ cup milk (as needed) Instructions In a large bowl, beat together butter and cream cheese until fluffy. Use a hand mixer or stand mixer for best results Add in cocoa powder and vanilla extract. Beat until combined. Beat in powdered sugar, 1 cup at a time. Add milk as necessary to make a spreadable consistency. The frosting should be very thick and will thicken even more if refrigerated. Notes In the photos above, an extra dark cocoa powder was used in the frosting. Extra dark cocoa will result in a much darker, almost black frosting. METRIC MEASUREMENTS Ingredients butter and flour for coating and dusting the cake pan 450 grams all-purpose flour 650 grams granulated sugar 155 grams unsweetened cocoa powder 17 grams baking soda 8 grams baking powder 11 grams salt 4 large eggs 350 ml buttermilk 350 ml warm water 115 ml vegetable oil 10 ml vanilla extract Instructions 1. Preheat oven to 176 degrees Celsius. Butter three 23 centimeter cake rounds. Dust with flour and tap out the excess. 2. Mix together flour, sugar, cocoa, baking soda, baking powder, and salt in a stand mixer using a low speed until combined. 3. Add eggs, buttermilk, warm water, oil, and vanilla. Beat on a medium speed until smooth. This should take just a couple of minutes. 4. Divide batter among the three pans. 5. Preheat oven to 450 degrees F. Lightly grease a 9x13 baking dish and set aside. 2. Place out 3 shallow dishes. Fill the first with flour, salt, pepper and stir together. In the second dish whisk eggs. In the third dish stir together both bread crumbs, garlic powder, and 1/2 cup grated parmesan cheese. 3. Coat the chicken breasts in the flour mixture, then dip into the egg mixture to coat, then roll in the bread crumb mixture until well coated. Set aside. 4. Pour the olive oil into a heavy skillet and add in butter over medium high heat. Once butter has melted, add in chicken and fry for 2-3 minutes on each side until chicken is browned on both sides. Transfer chicken to the lightly greased baking dish. 5. Spread marinara on top of each chicken breast. Top each breast with two slices of mozzarella and sprinkle on remaining 1/4 cup parmesan cheese. 6. Bake in the preheated 450 degree oven until cheese is bubbly and browned and chicken is cooked through, 15-20 minutes. Sprinkle with fresh basil and serve hot. Thanks for watching! Brown Canadian bacon in butter on each side and set aside. 3. Bring a large pot of salted water to a boil. Meanwhile, toast muffins 4. Stir vinegar into boiling water. Crack eggs into separate small bowls. Stir boiling water in a clockwise motion until a whirlpool forms. Gently slide egg from bowl into the boiling water, one at a time. Baked vanilla cake donuts topped with a semi-sweet chocolate glaze and sprinkles. You can't go wrong with sprinkles! ________________________________________­↓↓↓↓↓↓ CLICK FOR RECIPE ↓↓↓↓↓↓↓↓ _______________________________________ Baked Vanilla Cake Donuts with Chocolate Glaze and Sprinkles Ready In: 30 minutes Yield: 24 mini donuts Donuts: 1 1/2 cups all-purpose flour 1/2 cup sugar 2 teaspoons baking powder 1/4 teaspoon salt 1 egg 1/2 cup milk 1/2 cup butter, melted 1 teaspoon vanilla Glaze: 3/4 cup powdered sugar 1/4 cup unsweetened cocoa powder 2 tablespoons water sprinkles Instructions Preheat oven to 350 degrees. Lightly grease a mini-donut pan. In a medium-size mixing bowl, stir together flour, sugar, baking powder, and salt. Stir in egg, milk, and melted butter until combined. Transfer batter into a pastry bag fitted with a large circular tip. Pipe dough into donut molds, filling about 1/2 or 2/3 full. Bake in the preheated oven for about 10 minutes. Meanwhile, make the glaze by stirring together powdered sugar and cocoa powder in a small bowl. Add in water and stir until combined. Spread several tablespoons of sprinkles out on a small plate. Remove from oven and remove donuts from pan. Dip the tops of the donut into the glaze and then into the sprinkles. Let cool completely on a wire rack. Thanks for watching! In a mixing bowl, stir together ranch dressing, olive oil, worcestershire sauce, rosemary, salt, sugar, lemon juice, white vinegar, and black pepper. 2.
