Ingredients Dried red chili 20 (Any Red chili for your choice, dried red chili used here) Tomatoes 5 Small (4-5) Onion 1⁄2 Garlic cloves To Taste (Few cloves of garlic) Salt To Taste Water To Taste (As required) Herbs & spices To Taste (Like oregano or basil, can be added now or just before use) (Optional) Directions MAKING Put the chilies, tomatoes, onions and garlic in a pot, add salt and water and boil it till the vegetables tenderize. It is simpler to pressure cook to make it quick. Puree the cooked ingredients. Strain the sauce and discard the remnant seeds. SERVING Serve it with your favorite recipe Earlier, I used to make quick version of Enchilada Red Sauce by using following Ingredients 1 (15 oz.) can tomato sauce 1 Tbsp. chili powder 1 tsp. onion powder 1/2 tsp. dried oregano 1 tsp. garlic powder 1/4 tsp. cumin 1/2 tsp. salt (more to taste) Combine all ingredients in saucepan, mixing well. Cook and stir over medium heat until thickened. Makes 2 cups. But now no more can tomatoes and feel the flavor of freshness of sauce by using quality ingredients. In a pot on high heat, add water and quinoa and bring it to a boil. Once it has boiled, lower the heat and let it simmer covered for 10 minutes or until it is completely cooked. 2. In a pan, heat oil and add the garlic, onion, green chilies and stir fry on medium high for 1 minute. 3. Add salt to taste and the chickpeas. Stir until well incorporated. 4. Switch off the gas and add in the carrot and beetroot. Mix well. 5. Add the cooked quinoa, remaining vegetables and lemon juice. Mix until well incorporated. SERVING 6. Serve the salad garnished with slivered almonds.

So I learned to make Mascarpone cheese at home and now I enjoy all great desserts and many other Mascarpone recipes with great taste and here is the recipe with written instructions: What is Mascarpone Cheese? A thick Italian cream cheese that tastes WAY better than store bought. Ingredients: •Whipping Cream -- 2 cups (500 ml) •Fresh Lemon Juice -- 1 Tble (15 ml) Yields: Approx. 3/4 lb (340 g) Direction: 1.Heat the whipping cream in a non-reactive saucepan over low heat, stirring constantly to prevent scorching. 2.When the cream reaches 190 F(heat up till see you some bubbles around edges), remove from the heat and stir in the lemon juice. Continue stirring until the cream curdles, and is thick enough to generously coat the back of a wooden spoon. Allow to sit, undisturbed, for 30 minutes. 3.Line a sieve with several layers of dampened cheesecloth (or a clean, damp cotton/linen dishcloth) and set over a bowl. Pour the cooled cream mixture into the sieve, and allow to drain, undisturbed, until cooled completely. Cover the sieve with plastic wrap and refrigerate overnight. 4.The next day, remove the cheese from the sieve in 1 piece and stir well to make smooth and creamy. Will keep in the fridge for 7 to 10 days. Tips: •this recipe is easily increased -- use 1 tble fresh lemon juice for every 2 cups of whipping cream •use your newly made cheese to make Tiramisu, or better yet, Tiramisu Cheesecake.

Let it rest for 10 minutes. In a large bowl, add in the flour, remaining sugar and salt. Mix well with hands. Pour in the oil and mix well. Set aside. Mix the yeast with a spoon and pour into the flour mixture. Knead with hands and add more water if needed. Drizzle some oil over the dough and grease the bowl. Cover the dough with plastic wrap and let it sit for 60 minutes or until double in size. Preheat oven to 375 degrees F. Line a baking tray with parchment paper and set aside. MAKING Punch down the dough and flour the kitchen surface. Knead for a minute. Roll the dough 1/8 inch thick. Spread some butter over the rolled dough. Sprinkle some flour over it and fold to give a shape of puff pastry. Sprinkle some more flour and roll ¼ inch thin, again grease with butter, followed by some more flour. Roll again into ¼ inch thin and make a circle. Cut in a triangle shape and roll each piece into croissant shape. Place all the croissant over the prepared baking tray and cover. Let it rise for 30 minutes or until double in size. Grease the top with milk and bake in the oven for 14 minutes. SERVING Serve with some fruit preserves.

Dip the rice balls into the batter and dredge into Italian bread crumbs. In a deep pan, heat the oil on medium – high heat and carefully tip in, cook until golden brown. SERVING Serve the rice balls with your choice of condiment. I simply love them with Aachar(Indian Pickle) and Cucumber Raita(Spicy Yogurt) Aloo Paratha (Stuffed Spicy shallow fried Mashed Potato Bread) is very popular breakfast among all generations of people across length and breadth of India.. Instead of stuffing however, I thought of preparing it quickly by adding mashed potato and spices directly with flour. This Aloo Partaha is filling and taste yummy when eaten with pickle and yogurt. A must try!! INGREDIENTS: Wheat flour 2 Cup (32 tbs) (1 1/2 - 2 cups) Mashed potato 1 Cup (16 tbs) Salt To Taste Coriander powder 1 Tablespoon Amchur powder 1 Teaspoon (or 1 1/2 teaspoon lemon juice) Coriander cumin powder 2 Teaspoon Green chili 1⁄4 Teaspoon Ginger paste 1⁄4 Teaspoon Garlic paste 1⁄4 Teaspoon Carom seeds 1 Teaspoon (Optional) Turmeric powder 1⁄2 Teaspoon Finely chopped coriander leaves 1 Tablespoon Oil/Ghee 3 Tablespoon, divided (1 teaspoon for dough) Flour 1 Tablespoon (For dusting) Directions MAKING In a large bowl, add in all the ingredients and make dough. Grease your hands with some oil and take a small portion of the dough. And roll between the palms; sprinkle some flour over the rolling board and roll. Thicker than chapatti. Heat the flat pan and place the paratha; cook from both sides and in between smear some oil. SERVING Serve with some raita or achar. Spray another tortilla with the butter spray, place in a regularly placed cup and spray again with butter spray. 4. Bake in the preheated oven for about 10 minutes. For making Pinto beans chili : 5. In a pan heat oil, add the pinto beans and salsa sauce and let it boil with cover for about 15 minutes. SERVING 6. Into one taco shell add lettuce, guacamole, sour cream, onion, bell pepper, tomato, olives, jalapeno, shredded cheese and pinto beans chili. 7. Break the other taco shell into chips and add lettuce, guacamole, sour cream, onion, bell pepper, tomato, olives, jalapeno, shredded cheese and pinto beans chili.

Blender Directions GETTING READY 1. Peel, wash and chop all the vegetables and set them aside. MAKING 2. Heat a pot/pressure cooker with a couple of tablespoons of olive oil on medium heat. Add the chopped onions, carrot, celery, beetroot, ginger, garlic and herbs such as cilantro (coriander) and basil. 3. Add chopped tomatoes, salt and freshly ground black pepper. 4. Add whole dry red chilies (optional) and water. Stir lightly, cover the pot and allow it to simmer for about 25 to 30 minutes (if using an open pot). If using a pressure cooker, close the lid and let it cook till you hear one whistle of pressure release. 5. After its done, open the pot/pressure cooker, and spoon out the clear stock (without the solids or vegetables) into a bowl. To prepare the broth (with the vegetables): 6. Into a blender, spoon in the vegetables along with the stock and blend well. This is the vegetable broth, that you can refrigerate and can be used to prepare the vegetable stock and use in your cooking when desired. SERVING 7. The vegetable stock and broth may be stored in a refrigerator and used whenever desired in your cooking. TIPS Add 3/4 cups of water to about 2 to 3 tablespoons of vegetable broth to make one cup of vegetable stock which is ready to use. The vegetable broth may be frozen in ice cube trays (wrapped with plastic wrap) and once frozen, the broth cubes may be stored in zip lock bags in the freezer. This way, you can store easy-to-use vegetable broth cubes in your freezer. NOTE Other herbs such as oregano, rosemary and thyme may also be used for this recipe. For the vegetable stock, you can add in the vegetables of your choice.

Let it bloom for sometime. Add in the flour and knead with dough hook, using a stand mixer for 6 – 10 minutes. Spread some oil over the dough and on mixing bowl and let it rise, twice or thrice, about 30 minutes. For the sauce – in a pressure cooker, add in the veggies and salt. Cook for a few minutes. Remove the skin of tomatoes and red bell pepper and transfer all the veggies to a blender. Blend until smooth. Take out the sauce in a medium bowl; stir in paprika, sugar and basil leaves. Set aside. Punch the dough and take out over a floured surface; knead for a few minutes and divide. Spread over the baking pan and cover with kitchen towel and let it rise for a few minutes. Preheat oven to 375 degrees F. MAKING Spread sauce over the prepared dough sheet and top with cheese and desired toppings. Bake for 20 minutes or until crust is browned. SERVING Slice the pizza and serve.

In a dry blender, add the cashew nuts and almonds and blend together into a powder. 2. Using a sieve, sift the flour into a large mixing bowl until an even and fine consistency of powder is achieved. 3. Preheat the oven at 350 degrees F. MAKING 4. For the Kaju badam puri: Take the kaju badam dry powder, add sugar, cardamom powder, kesar mix well. 5. To make the dough, add milk 2 tablespoon at a time and mix until well combined into a cookie dough. Make sure there are no cracks in the dough. 6. Take two sheets of wax paper and place this dough in between the sheets on a wooden board and using a rolling pin, roll out the dough to form a quarter inch thick flat dough. 7. Remove the dough from the sheets and place it on the wooden board, then using any shape cookie cutter, make cookie shapes from the dough and place them neatly on a baking tray about 1 inch apart. 8. Bake this in the oven at 350 degrees F for 12 - 15 minutes or until done. SERVING 9. Serve these kaju badam puris or cookies with warm milk or tea.

Take a wide mixing bowl, add plain flour, baking powder, salt and mix well. 2. To the dry ingredients add the melted butter, yogurt, minced garlic, finely chopped coriander leaves and chopped green chilies. Mix to combine well. 3. Gradually add water a little at a time and knead the dough. Knead till you get a soft dough. If the dough is sticky, sprinkle some more flour and knead for another minute or so to get a soft stretchy dough. 4. Once done, cover the dough with a plastic wrap and let it rest for at least 30 minutes. MAKING 5. After 30 minutes, unwrap the dough and knead it for another minute or so, sprinkling some more flour over it. 6. Take a wide pan with a lid, preheat it on a high heat with the lid on. 7. Take lemon size portions of the dough, dust and roll into round naans. 8. Tap some plain water on both sides of the rolled naan and place it on the hot pan. Cover and cook each side until done, flipping them at intervals. 9. If desired you can sprinkle your favorite seeds (chef uses onions seeds also called kalaunji) on top of the naan just before broiling. SERVING 10. Serve warm smeared with butter, along with any Indian curry of your choice. NOTE The naan can be baked in an oven or a tandoor as well.

Stir well with a spatula. Add in paneer and coat well; cover with a lid and let it marinade for 30 – 60 minutes. MAKING For the gravy - In a pan heat oil, add in cumin seeds and let it crackle, followed by the carom seeds. Stir in the remaining turmeric powder, followed by the onion and cook for a few seconds. Season with salt, ginger paste, garlic paste and green chili paste. Stir well. Add in the bell pepper and let it cook for a minute. Add in the tomato puree and paste and stir well, pour some water if needed. Season with garam masala and cook for a few minutes and set aside. For the tawa paneer – In a flat pan, heat the oil and ghee on medium heat; turn the heat to low and place the paneer. Cook until golden brown from all sides. Add paneer back to the gravy and turn on the stove. Stir well and add the cream. Garnish with coriander leaves and turn off the stove. SERVING Serve with Roti and enjoy.

You can try the same recipe with Papaya if mango is not available. In India, when Alphonso Mangoes are in season, some of the vendors make Kulfi Stuffed Mangoes, very tasty yummy dessert. It is very satisfying on very hot summer day. Kesar Kulfi (Saffron flavored Ice cream) is usually filled in mangoes but I thought of preparing Pista kulfi as well. It is very important to pick quality mango for this recipe since, the mangoes with very less fiber or no fiber. I recommend Alphonso Mango but it is not available everywhere. I like to use Champagne Mangoes also some call it Banana Mangoes which are sweet and has very less fiber. Making of Kulfi(No churn Indian Ice Cream) is super easy. I just take 11/2 cups cream and 200gms of Sweetened Condensed milk and that's it. Then you can flavor it up with your favorite ingredients. A good quality non-stick pan 2. A medium sized flat brush 3. A pizza cutter - to cut the crude edges off the prepared wrapper or pastry 4. A mix of 1 teaspoon of oil and 1 teaspoon of water - for greasing the pan (as needed) Directions GETTING READY 1. In a small bowl take a mix of water and oil and keep aside, which can be used later for greasing the pan before preparing the pastry sheets. 2. In a mixing bowl take flour, corn starch and salt and mix them together. 3. To this dry mixture, add water as needed slowly and gradually mixing to get a lump free smooth batter. MAKING 4. Take a non stick pan, grease it with the mix of oil and water using a kitchen towel. Place the pan on a low heat. 5. Using the brush spread the batter into a very thin layer onto the non-stick pan and let it cook for a few minutes. When it is done, using a spatula the pastry sheet can be peeled off easily from the pan. Wipe the pan clean with the kitchen cloth before spreading the batter every single time. FINALIZING 6. Using a pizza cutter cut off the uneven edges of the prepared wrapper or pastry sheet. The prepared wrappers can be cut into square shapes as desired. SERVING 7. The prepared wrappers can be rolled (with a filling of your choice), sealed and deep fried in oil to prepare spring rolls or samosas and served warm. TIPS The prepared pastry sheets need to be covered with a damp cloth to make sure that they do not get dry. Spray some oil between the pastry sheets before stacking them to store in the freezer. This would make it easier to separate the sheets after defrosting before use.
