The Most Amazing Chocolate Cake is here. I call this my Matilda Cake because I swear it’s just as good as the cake that Bruce Bogtrotter ate in Matilda. Moist, chocolaty perfection. This is the chocolate cake you’ve been dreaming of! ________________________________________­↓↓↓↓↓↓ CLICK FOR RECIPE ↓↓↓↓↓↓↓↓ _______________________________________ The Most Amazing Chocolate Cake BUTTERMILK SUBSTITUTE: http://thestayathomechef.com/buttermilk-substitute/ Prep Time: 10 minutes Ready In: 45 minutes Yield: 3 9-inch rounds Ingredients butter and flour for coating and dusting the cake pan 3 cups all-purpose flour 3 cups granulated sugar 1½ cups unsweetened cocoa powder 1 tablespoon baking soda 1½ teaspoons baking powder 1½ teaspoons salt 4 large eggs 1½ cups buttermilk 1½ cups warm water ½ cup vegetable oil 2 teaspoons vanilla extract Instructions Preheat oven to 350 degrees. Butter three 9-inch cake rounds. Dust with flour and tap out the excess. (see cooking lesson below) Mix together flour, sugar, cocoa, baking soda, baking powder, and salt in a stand mixer using a low speed until combined. Add eggs, buttermilk, warm water, oil, and vanilla. Beat on a medium speed until smooth. This should take just a couple of minutes. Divide batter among the three pans. I found that it took just over 3 cups of the batter to divide it evenly. Bake for 30-35 minutes until the cake meets the toothpick test (stick a toothpick in and it comes out clean). Cool on wire racks for 15 minutes and then turn out the cakes onto the racks and allow to cool completely. Frost with your favorite frosting and enjoy! Notes The better quality cocoa powder you use the better the cake will taste. Chocolate Cream Cheese Buttercream Frosting Prep Time: 10 minutes Yield: enough frosting for a 3 tiered cake Ingredients 1½ cups butter, softened 8 oz cream cheese, softened 1½ cups unsweetened cocoa powder 3 teaspoons vanilla extract 7-8 cups powdered sugar about ¼ cup milk (as needed) Instructions In a large bowl, beat together butter and cream cheese until fluffy. Use a hand mixer or stand mixer for best results Add in cocoa powder and vanilla extract. Beat until combined. Beat in powdered sugar, 1 cup at a time. Add milk as necessary to make a spreadable consistency. The frosting should be very thick and will thicken even more if refrigerated. Notes In the photos above, an extra dark cocoa powder was used in the frosting. Extra dark cocoa will result in a much darker, almost black frosting. METRIC MEASUREMENTS Ingredients butter and flour for coating and dusting the cake pan 450 grams all-purpose flour 650 grams granulated sugar 155 grams unsweetened cocoa powder 17 grams baking soda 8 grams baking powder 11 grams salt 4 large eggs 350 ml buttermilk 350 ml warm water 115 ml vegetable oil 10 ml vanilla extract Instructions 1. Preheat oven to 176 degrees Celsius. Butter three 23 centimeter cake rounds. Dust with flour and tap out the excess. 2. Mix together flour, sugar, cocoa, baking soda, baking powder, and salt in a stand mixer using a low speed until combined. 3. Add eggs, buttermilk, warm water, oil, and vanilla. Beat on a medium speed until smooth. This should take just a couple of minutes. 4. Divide batter among the three pans. 5. Pour heavy cream into the mason jar, filling it half-way full. Screw the lid on. 2. Shake mason jar for approximately 5-7 minutes. After the first 2 minutes you'll have whipped cream. Keep shaking until you hear that a lump has formed inside, and shake an additional 30-60 seconds after that. 3. Remove the solids from the jar. The remaining liquid is buttermilk. You can save that for other recipes, or discard it. 4. Place the solids into a small bowl. Pour cold water over the butter and use your hands to squish it into a ball. Discard water and repeat rinsing 2 times more. 5. At this point you have butter. You can add in things like salt, honey, and herbs to create flavored butters, or serve in its pure form as is. Time to Make It: 20 minutes prep, 3 hours total Yield: 2 dozen Ingredients 2 cups warm milk 2 tablespoons instant dry yeast 1/4 cup white granulated sugar 2 teaspoons salt 6 tablespoons salted butter, softened 2 large eggs 6 cups all-purpose flour 1 tablespoon melted butter Instructions 1. In the bowl of a stand mixer, combine warm milk, yeast, sugar, salt, butter, and eggs. 2. Add in 5 1/2 cups of flour. Using a dough hook, turn the mixer on to a low speed. Once the flour starts to incorporate into the dough, increase the speed to a medium range. Slowly add the remaining 1/2 cup of flour until the dough pulls away from the sides of the bowl. The dough mixture should be slightly sticky and soft. 3. Transfer the dough to a lightly greased mixing bowl. Cover with a towel and let rise 90 minutes. 4. Lightly grease a baking sheet. Punch down the dough and form into 24 rolls. Place on the greased baking sheet in six rows of four. 5. Cover and let rise 1 hour. 6. Preheat oven to 375 degrees. Bake the rolls for 12 to 14 minutes, until lightly browned. 7. Remove rolls from oven and brush with melted butter. 8. Serve the rolls warm, or to cool, let rest on the pan for 15 minutes before transferring to a wire cooling rack. Once cooled completely, store in a plastic bag. FAQ What temperature should the milk be? The milk should be warm to the touch, between 100 and 110 degrees. How should I measure the flour? The flour you buy at the store these days is generally pre-sifted. There is no need to sift your flour. I prefer the scoop and sweep method as it is ultra-convenient. Simply use your measuring cup to scoop out the flour and level off the top. Weighing your flour using a kitchen scale is the only way to ensure complete accuracy. Even then, bread making is a both fickle and forgiving and the actual amount of flour you add can change just due to the humidity in the air. When making this roll recipe, it is best to go by the touch and feel of the dough. How soft should my butter be? The butter should be at room temperature and smoosh easily to the touch. If you soften the butter in a microwave, be sure to work in small time increments so you don't get any melted pools of butter. Does it matter if I use unsalted butter? I have tested the recipe with both salted and unsalted butter without a huge or notable difference. Either will work. Does it matter if I use bread flour? I have used both all-purpose flour and bread flour without a huge or notable difference. I do not have a preference and just use whichever is convenient. What should the dough feel like? The dough should be slightly sticky, but still very soft and pliable. It should just barely not be sticking to the bowl. If you add too much flour and the dough stiffens, your rolls will also get a little stiff. I like to say you can feel a soft roll just by touching the dough. How can I make each roll the same size? I use a kitchen scale to measure each of my dough balls. It isn't much added effort and I end up with rolls that are nearly uniform in size. How much do each of your rolls weigh? Using my handy dandy kitchen scale , I make each roll to be between 2.4 and 2.5 oz. Can I double the recipe? Unless you have a commercial-size mixer, I would make separate batches so you don't overload your machine. When I make these rolls in mass, I make the dough in back to back batches and label each rising mixing bowl with a number so I know which one I made first. Melt-in-your-mouth ribs don't have to be complicated. Find out how to make ribs the easy way...in the slow cooker. Remove the membrane from the back of the ribs. See my video for an easy demo. Just slide your fingers around the side to loosen it up and rip it right off. 2. Give the ribs a dry rub if you want. This step is optional. Some people like a good dry rub first for additional flavor. Put your ribs in the crockpot. Lather them with barbecue sauce. You can use a homemade sauce like my Raspberry-Chipotle Barbecue Sauce for ribs or a store-bought bottle. If you are going store-bought I recommend using Sweet Baby Ray's. Just remember to save a little bit for later. 3. Cook on low for 8 to 10 hours. The more racks in the pot, the longer you'll need to cook. 4. Gently remove the racks and lay them out on a foil lined baking sheet. Add more barbecue sauce on top. 6. Broil under a broiler for 3-5 minutes until the barbecue sauce starts to bubble and caramelize. Alternately you could wrap them in foil and throw them on a heated grill for the same effect. I sometimes do this for crowds and picnics. This keep the ribs warm until ready to eat and makes it easy to pass out portions. 7. Enjoy! They are juicy, tender, and full of flavor. These are a great easy dinner idea. How long to bake pork chops? The length of time that you need to bake a pork chop depends on the thickness of your meat as well as whether or not is bone-in. Searing your meat before baking will also impact the cooking time. A good rule of thumb is 7 minutes of baking in a 400 degree oven per half inch of meat. If you sear your meat beforehand, reduce that amount of 2 minutes. If your pork chop has a large bone, you may need to add a few minutes to the cooking time. Pork needs to be cooked to an internal temperature of 145 degrees F. Let your meat rest for at least 5 minutes before cutting into it. INGREDIENTS 4 boneless pork chops, 1 inch thick 4 tablespoons extra virgin olive oil 2 teaspoons salt 1 teaspoon black pepper 1 teaspoon smoked paprika 1 teaspoon onion powder INSTRUCTIONS 1. Preheat an oven to 400 degrees F. Lightly grease a baking sheet. 2. Rub each pork chop with olive oil. 3. In a small bowl mix together salt, pepper, paprika, and onion powder. Season all sides of the pork chop with this mix. Place seasoned pork chops onto the prepared baking sheet. 4. Bake in the preheated oven for 15 to 20 minutes, or until pork chops reach an internal temperature of 145 degrees F (which will depend on how thick the pork chops are). Serve hot. This recipe will fill two, 9 inch cake rounds. It should bake for approximately 30-35 minutes in a 350 degree oven. Q: Do I have to use buttermilk? What is buttermilk? Is there a buttermilk substitute? A: Yes, buttermilk is necessary for this recipe. It has to do with the way it interacts with other ingredients. Buttermilk is the liquid leftover after churning butter. A: There are numerous options for substituting eggs in baking recipes. You can always try using one of those. Q: Can I use a different frosting? A: You certainly can! You are also welcome to use any other frosting recipe that you like. Q: Won't the hot water cook the eggs? A: No. It won't. You aren't using boiling water and you shouldn't. Q: Can I substitute coffee for the hot water? A: Yes you can. I simply don't prefer the addition of coffee to my chocolate cake. Q: What kind of cocoa powder did you use? A: I used Hershey's Unsweetened Cocoa Powder in order to use a brand that is most widely available to my readers. I'm also fond of using higher quality cocoa powders like Ghiradelli's or cocoa powders from specialty chocolatier shops, but those are pretty pricey. I don't recommend using cheap store brands. Mix together flour, sugar, cocoa, baking soda, baking powder, and salt in a stand mixer using a low speed until combined. 3. Add eggs, buttermilk, warm water, oil, and vanilla. Beat on a medium speed until smooth. This should take just a couple of minutes. Scrape the sides and bottom of the mixing bowl to make sure everything got mixed in. 4. Fill each cupcake 2/3 full. 5. Bake for 20-22 minutes until the cupcakes meet the toothpick test (stick a toothpick in and it comes out clean). Remove from tins and cool completely. 6. Make the frosting by In a large bowl, beat butter until fluffy using a hand mixer. Add in cocoa powder and vanilla extract. Beat until combined. Beat in powdered sugar, 1 cup at a time, beating in between. 7. Transfer frosting to a piping bag and pipe onto completely cooled cupcakes. Grease three 9-inch pans. Line the bottom with parchment paper. Preheat an oven to 350 degrees F. 2. In a large mixing bowl, use a hand mixer to cream the butter and sugar together. Beat in almond extract. 3. Use a fork to combine the eggs and milk together in a bowl or 2 cup liquid measuring cup. Set aside. 4. In another mixing bowl stir together cake flour, baking powder, and salt. 5. Add 1/3 of the dry ingredients to the butter mixture and mix in until just combined. Add in half of the milk mixture and combine. Add in another 1/3 of the dry ingredients until combined followed by the remainder of the milk mixture. Add in the remainder of the dry ingredients and mix with the hand mixer until just combined, using a rubber spatula to scrape the sides and bottom to make sure everything is mixed in. 6. Divide the batter among the three prepared pans. Bake at 350 for 35 minutes for about 25 minutes. Let sit in pans for 5 minutes and then transfer to a wire rack to cool completely before layering and frosting. WHITE BUTTERCREAM FROSTING 1 ½ cups softened butter 2 teaspoons almond extract 4 cups powdered sugar 1 tablespoon milk 1. Use a hand mixer to whip softened butter and almond extract together. The balance between layers of cheese, noodles, and homemade bolognese sauce is perfection! ________________________________________­↓↓↓↓↓↓ CLICK FOR RECIPE ↓↓↓↓↓↓↓↓ _______________________________________ The Most Amazing Lasagna Recipe INGREDIENTS 1 pound sweet Italian sausage 1 pound lean ground beef 1 large white onion, minced 5 cloves garlic, crushed 1 (28 ounce can) crushed tomatoes 2 (6 ounce can) tomato paste 1 (15 oz can) tomato sauce 1/2 cup chicken broth 2 tablespoons white sugar 1/2 cup chopped fresh basil 1 teaspoon fennel seeds 1 teaspoon ground oregano 1/2 teaspoon salt 1/4 teaspoon ground black pepper 1/4 cup + 2 tablespoons chopped fresh parsley (divided) 1 pound lasagna noodles 30 ounces ricotta cheese 1 large egg 1/2 teaspoon salt 1/8 teaspoon ground nutmeg 1 pound deli sliced mozzarella cheese 1 cup freshly grated Parmesan cheese INSTRUCTIONS 1. In a large pot over medium heat, add in ground sausage and ground beef. Use a spoon to break up the meat into small pieces. Add in onion and garlic and cook until meat is well browned, stirring constantly. Stir in sugar, fresh basil, fennel, oregano, 1/2 teaspoon salt, pepper, and 1/4 cup chopped parsley. Pour in crushed tomatoes, tomato paste, tomato sauce, and chicken broth. Stir well and bring to a simmer. Reduce heat to low and simmer 1-4 hours, stirring occasionally. 2. Meanwhile, place lasagna noodles into the bottom of a pan. Pour hot tap water directly over the noodles, making sure the pasta is completely immersed in the water. Let them soak for 30 minutes, then drain and discard water. 3. In a mixing bowl, combine ricotta cheese with egg, remaining 2 tablespoons parsley, 1/2 teaspoon salt, and nutmeg. Refrigerate until ready to assemble lasagna. 4. Preheat oven to 375 degrees. Lightly grease a deep 9x13 pan. 5. To assemble, spread about 1 cup of meat sauce in the bottom of the prepared pan. Place 4 noodles on top. Spread with 1/3 of the ricotta cheese mixture. Top with 1/4 of mozzarella cheese slices. Spoon 1 1/2 cups meat sauce over mozzarella, then sprinkle with 1/4 cup parmesan cheese. Repeat layering two more times to create three complete layers. To finish, place a final layer of pasta, topped with another 1 cup of meat sauce to cover the pasta. Top with remaining mozzarella and Parmesan cheese. Cover loosely with aluminum foil. 6. Braising is a combination cooking method where you first sear the food with a dry heat and then slowly cook it for a long period of time in a wet heat, usually a braising liquid with a lid to trap in the heat. Tough cuts of meat that require long cooking times to reach a tender, pleasant texture are great candidates for braising. INGREDIENTS 6 (about 4 pounds) bone-in short ribs 1/2 teaspoon salt 1/2 teaspoon black pepper 3 tablespoons extra virgin olive oil 1/2 white onion, diced 2 to 3 cloves garlic, crushed 1 cup beef broth 2 tablespoons worcestershire sauce 1 sprig fresh rosemary INSTRUCTIONS 1. Preheat oven to 350 degrees. 2. Season all sides of the short ribs with salt and pepper. 3. Heat a heavy, oven safe pot over high heat. Add in olive oil and allow to heat briefly. Sear short ribs in olive oil, about 1 minute per side. Remove from pot and set aside. 4. Add in onion and sautee 2 to 3 minutes. Add in garlic and sautee 1 minute more. 5. Pour in beef broth and worcestershire sauce. Bring to a simmer. Add in meat. Place rosemary sprig on top. 6. Cover and transfer to preheated oven for about 2.5 hours, until meat is tender. Heat the milk and heavy whipping cream in a saucepan over medium-high heat until it begins to simmer and foam. 2. Meanwhile, in a mixing bowl, whisk together the egg yolks and sugar using a whisk or hand mixer. Continue whisking/mixing until the mixture is smooth and ribbon-like. 3. Once the milk begins to simmer, remove it from the heat. Slowly pour half of it into the egg mixture while whisking rapidly. Working quickly, transfer the egg mixture into the saucepan, pouring in a slow stream and whisking rapidly until everything is combined. It is important to work quickly here so that the egg doesn't cook and create little chunks of cooked egg. 4. Heat over medium heat and whisk in the pistachio nut paste. Continue heating until the mixture starts to thicken. 5/ Remove from heat and pour the mixture into a sturdy, freezer-safe pan, like a bread pan. Place in freezer for 30 minutes. 6. Because we are doing this by hand rather than an ice cream maker, it is important to churn the gelato by hand as it freezes in order to break up the ice crystals and create a smooth texture. Whisk (or use a hand mixer) on the gelato every 30-45 minutes until it reaches the texture of frozen yogurt, then simply leave it in the freezer until ready to eat. Add in flour. Using a dough hook, turn the mixer on to a low speed. Once the flour starts to incorporate into the dough, increase the speed to a medium range. Add more flour as necessary so that the dough pulls away from the sides of the bowl. The dough mixture should be tacky, but not stick to your hands. It should be soft. Add more or less flour until the dough reaches the desired consistency. The amount of flour you add in bread making is always an approximation and you should go by feel. Transfer the dough to a lightly greased mixing bowl. Cover with a towel and let rise until double in size, about 1 hour. Lightly grease a baking sheet. Punch down the dough and roll into a 12inch by 18inch rectangle. Brush the dough with 1/2 cup melted butter. In a small bowl, combine the brown sugar and cinnamon. Sprinkle on top of the melted butter. Roll up tightly lengthwise so you have one long roll. Use plain dental floss or a sharp knife to cut the dough into 12 one-inch slices. Place the slices onto a lightly 9x13 pan. Cover and let rise 30 to 45 minutes. Preheat oven to 325 degrees. Bake the rolls for about 14 minutes, until just kissed with brown on top. Transfer chicken to the lightly greased baking dish. 5. Spread marinara on top of each chicken breast. Top each breast with two slices of mozzarella and sprinkle on remaining 1/4 cup parmesan cheese. 6. Use a meat tenderizer to pound out the chicken breasts until about 1/4-inch thick. 2. Heat olive oil in a heavy skillet over medium-high heat. Saute mushrooms, bell pepper, and onions for 5 minutes, until par-cooked. 3. Preheat oven to 400 degrees. Lightly grease a 9x13 pan. 4. Place a pinch of cheese in the center of each chicken breast. Place a large spoonful of mushroom and bell pepper mixture on top. Finish off with another pinch of cheese. 5. Carefully roll up the chicken so stuffing is completely inside. Secure the chicken with toothpicks. Place in the prepared pan. Season generously with cajun seasoning. Place a tablespoon of butter on top of each chicken breast. 6. Bake in the preheated oven until chicken is cooked through, to an internal temperature of 165 degrees, about 30 to 40 minutes. 7. Remove toothpicks before serving. Because it has such a mild flavor, it’s easily used in recipes that have bold flavors. In something like eggplant parmesan, the eggplant flavor itself isn’t even really tasted. INGREDIENTS 3 large eggplants 1 teaspoon salt 1 cup all purpose flour 1 teaspoon salt ¼ teaspoon pepper 2 large eggs 1 cup panko bread crumbs 1 cup Italian style bread crumbs 1 teaspoon garlic powder 2 cups marinara sauce 8 ounces fresh mozzarella, sliced ¼ cup chopped fresh basil 1/2 cup freshly grated parmesan cheese INSTRUCTIONS 1. Slice eggplant into 1/4 inch rounds. Lay out in a single layer on a paper towel lined baking sheet and sprinkle with salt. Let sit 1 hour to release moisture. 2. Preheat oven to 400 degrees F. Lightly grease a large baking sheet. 3. Set up 3 shallow dishes for dredging. In the first dish, stir together flour, salt and pepper. In the second dish, whisk eggs. In the third dish, stir together panko bread crumbs, Italian bread crumbs, and garlic powder. 4. Working one at a time, dredge eggplant slices in flour mixture, dip in egg mixture, and then coat in bread crumb mixture. Place onto the prepared baking sheet in an even layer. Sprinkle on a light coating of parmesan cheese. 5. Roast in the preheated oven for 20 minutes, flipping eggplant slices halfway through. 6. Spread 2 tablespoons of marinara into the bottom of a lightly greased 9x13 dish. Layer half of the eggplant slices onto the bottom. Top with half of the remaining marinara, and then layer on all of the mozzarella slices. Sprinkle on half of the basil and half of the parmesan cheese. 7. Place remaining eggplant slices on top and cover with remaining marinara, basil, and parmesan cheese. 8. To freeze, simply place your pierogies in a single layer on a parchment lined baking sheet. Make sure they aren't touching so that they don't stick together. Once frozen, remove from the freezer and transfer to a resealable plastic bag for long term storage. PRO TIP: The key to homemade pierogi is to be sure to seal it shut so that none of the stuffing comes out during cooking. Don't let any of the filling get in between the dough edges or you won't be able to get a good seal. Pinch the dough shut with your fingers and then press with the tongs of a fork to further seal and give a decorative edge. In a large mixing bowl making the dough by combining flour, eggs, sour cream and water. Slowly beat in the eggs until dough is well combined. Turn the dough out onto a clean, lightly floured surface. Knead 3 to 5 minutes. Wrap in plastic wrap and rest 30 minutes. 2. In another large mixing bowl, stir together mashed potatoes, garlic powder, onion powder, salt, pepper, and cheese. 3. Bring a large pot of salted water to a boil. Meanwhile, pinch of tablespoon sized pieces of dough and roll into about three dozen balls. Roll each ball out on a lightly floured surface into a 3 1/2 to 5 inch circle. Cover with a damp towel or paper towel to prevent them from drying out. 4. Place a heaping tablespoon of potato filling into the center of each circle. Fold in half, pinching the sides shut with your fingers, or gently with a fork to seal. Working in small batches, boil in salted water 2 to 3 minutes, until they float. Remove and transfer to a paper towel lined plate to drain. 5. INGREDIENTS 4 bone-in pork chops 1/4 cup extra virgin olive oil 2 tablespoons brown sugar 5 cloves crushed garlic 1 tablespoon lemon juice 1 tablespoon worcestershire sauce 1 tablespoon white wine vinegar 1 teaspoon ground mustard 1/2 teaspoon salt 1/2 teaspoon black pepper INSTRUCTIONS 1. Place pork chops into a resealable plastic bag. 2. In a small mixing bowl, whisk together olive oil, brown sugar, garlic, lemon juice, worcestershire sauce, white wine vinegar, ground mustard, salt and pepper. 3. Pour over the pork chops in the plastic bag. Seal and place in the refrigerator for 2 to 8 hours. 4. To cook, Heat an oven-safe heavy skillet over high heat. Preheat an oven to 400 degrees. 5. Sear the pork chops for 2 minutes on each side.Transfer skillet immediately to the oven and cook until the internal temperature of the chop reaches 145 degrees, about 15 minutes. 6. Bacon jam is a bacon lover’s dream come true! ________________________________________­↓↓↓↓↓↓ CLICK FOR RECIPE ↓↓↓↓↓↓↓↓ _______________________________________ Bacon Jam Ready In: 1 hour Yield: about 2 cups 1 pound thick cut bacon, cut into 2-inch pieces ½ sweet onion, sliced ⅓ cup brown sugar, tightly packed 4 cups beef broth 2 tablespoons honey 1 teaspoon smoked paprika ½ teaspoon black pepper 2 tablespoons butter Instructions Place the bacon into a large heavy skillet over medium heat. Cook until the fat has rendered, 10 to 15 minutes. Add in onion and saute until the onion is soft, about 5 minutes. Stir in the brown sugar. Pour in 1 cup of the beef broth. Simmer until the mixture has reduced and is thickened, about 10 minutes. Pour in another cup of beef broth. Simmer until the mixture has reduced, about 10 minutes. Continue this process until all the beef broth has been used. Transfer the bacon mixture to a blender. Add in honey, paprika, and black pepper. Blend for about 30 seconds. The mixture should be chunky, not smooth. Add in butter and stir until melted. Use immediately or transfer to an airtight container. Refrigerate for up to 2 weeks. Warm before using. Delicious Homemade Rye Bread doesn't get much simpler than this bakery style artisan bread. Caraway and rye flour gives the bread its distinct flavor. And guess what? No machines required! ________________________________________­↓↓↓↓↓↓ CLICK FOR RECIPE ↓↓↓↓↓↓↓↓ _______________________________________ How to Make Homemade Rye Bread INGREDIENTS 1 1/2 tablespoons yeast 2 cups warm water 1 1/2 tablespoons salt 1 1/2 tablespoons caraway seeds 1 1/2 cup rye flour 3+ cups all-purpose flour cornmeal for dusting 1/4 tsp cornstarch + 1/4 cup water INSTRUCTIONS In the bowl of a stand mixer, combine the yeast, water, salt, caraway, and rye flour. Add in all-purpose flour 1 cup at a time, adding more if necessary to form a dough ball that doesn't stick to the sides of the bowl. Dough should be soft, not stiff, but should hold together on its own without being overly sticky. Transfer to a lightly greased large bowl. Cover with a dish towel and let rise until double, about 1 hour. Shape it into a loaf by stretching the dough from the top center of the dough ball over the edges, and then underneath. It should look and feel like you are holding the loaf with two hands and are pulling the dough inside out with your thumbs. Give several of those pulls with your thumbs until you have a nice looking little loaf. Dust a pizza peel or wooden cutting board with cornmeal. Put the loaf on the prepared board and let it rise for another 40 minutes. Preheat a pizza/baking stone in the oven to 450 degrees. Place a shallow pan on the rack below the baking stone. Dissolve the cornstarch in the 1/4 cup water. Microwave for 45 seconds. Brush the cornstarch liquid on top of the loaf and cut several parallel lines on the top. Bake the loaf directly on the stone. When you put the loaf in, pour a tall glass of water into the shallow pan below. It'll pop and sizzle and steam, so watch your hands. Close the oven door and bake for 30 minutes. Thanks for watching! It's easy to make and oh so delicious to enjoy this takeout fakeout favorite in the comfort of your own kitchen. Is Orange Chicken Chinese? No! Orange Chicken is not a traditional dish found in China. It is a popular dish served at Chinese restaurants in North America, but it is most definitely not an authentic or traditional dish. What cut of chicken should I use to make orange chicken? You can use either boneless skinless chicken breasts or boneless skinless chicken thighs depending on whether you want white meat or dark meat. Chicken thighs will have a bit more gristle than breasts, but will be more moist. INGREDIENTS CHICKEN: 4 boneless skinless chicken breasts 4 egg whites 2 tablespoons cornstarch 1 teaspoon salt 1/2 teaspoon white pepper SAUCE: 1 cup orange juice 1 orange, zested ¼ cup rice vinegar 2 tablespoons soy sauce ⅓ cup brown sugar 1 teaspoon ground ginger ½ teaspoon red pepper flakes 1/4 cup water 1 tablespoon cornstarch Vegetable oil, for frying 1/4 cup sliced green onions (optional) INSTRUCTIONS 1. Cut chicken breasts into bite sized pieces. In a medium-sized mixing bowl, whisk together egg whites and cornstarch. Submerge chicken breast pieces in mixture and set aside. 2. In a small saucepan, stir together orange juice, orange zest, rice vinegar, soy sauce, brown sugar, ginger, and red pepper flakes. Bring to a simmer. 3. In a small bowl, whisk together water and cornstarch. Pour slurry into sauce mixture and stir in until thickened. Remove from heat and set aside. 4. Meanwhile, pour 2 inches of vegetable oil into a large, heavy bottom pot. Heat to 350 degrees. Working in small batches, fry chicken pieces until cooked through and golden brown, about 3 to 4 minutes. Remove from oil and drain on a paper towel lined plate. 5. Preheat oven to 400 degrees. Lightly grease a baking sheet. 2. In a medium-size mixing bowl, knead together ground beef, ground pork, bread crumbs, Worcestershire sauce, egg yolks, 1/2 tsp allspice, 1/2 tsp nutmeg, 1/2 tsp salt, and 1/2 tsp pepper. Form into 1-inch meatballs and place on baking sheet. Bake in the preheated oven for about 30 minutes. 3. Meanwhile, you'll want to make the egg noodles, or white rice to go with the dish, whichever you prefer to serve the meatballs and gravy over. 4. Make the gravy by melting butter in a large saucepan. Once butter is melted, stir in flour, nutmeg, and allspice until it forms a paste. Pour in beef broth and 1/4 cup Worcestershire sauce and heat over medium-high heat until thickened. Remove any bones from the filet and place into a shallow dish or gallon sized resealable plastic bag. 2. In a small bowl, whisk together soy sauce, honey, orange juice, garlic, ginger, and pepper flakes. Pour over salmon. Refrigerate and let marinate 30 minutes. 3. Cook your salmon over a grill, in a large skillet, or to bake, preheat your oven to 375 degrees F. Line a baking sheet with aluminum foil. Place salmon filet in the center and loosely wrap aluminum foil around to trap steam. Bake in the preheated oven for 15 to 20 minutes, or until the salmon flakes easily with a fork.
