An American favorite dish...SCALLOPED POTATOES, also know as AU GRATIN POTATOES. This popular (bake in the oven) creamy cheesy dish made with thinly sliced potatoes, grated cheese, milk, onions (optional), butter, salt & pepper is the "BEST". Serve with baked, grilled or fried chicken, fish or meat. Click on "Show more" before for this recipe & links to complimentary food videos... CREAMY SCALLOPED POTATOES Preheat oven to 350 degrees F. Grease 1 quart baking dish, set aside 4 cups potatoes, clean under cool running water, peel, slice thinly & covered with fresh cool water 8 ounces Colby & Montaray Jack cheese, grated (set aside 1/2 cup for topping) 1 1/2 cups milk 2 Tablespoon onion, minced 3 tablespoons butter 3 tablespoons all-purpose flour 1 1/2 teaspoon salt 1/2 teaspoon black pepper 1. In a medium skillet or sauce pan, over medium-high heat, melt butter. Whisk in flour & onions, cook 1 minute. 2 Slowly whisk in milk, continue to stir until mixture is bubbly. Remove from heat. 3. Add salt, pepper and grated cheese. Whisk until blended. 4. In prepare baking dish, arrange half the drained potato slices in the bottom. Cover potatoes with half the cheese sauce. Add another layer of the remaining drained potato slices and cover in remaining cheese sauce. 5. Top with reserved 1/2 cup of grated cheese. 6. Bake uncovered for 1 hour. 7. Cool 30-40 minutes before serving.

FAMOUS French's GREEN BEAN CASSEROLE...that you're gonna just love!! Deronda demonstrate how to make this Thanksgiving Day side dish that families have been serving for decades!! Simple, fast yet easy to make with only 5 ingredients!! START PREPARING... French's GREEN BEAN CASSEROLE Preheat oven to 350 degrees F. Lightly oil 1-1/2 quart baking dish. Set aside. 2 cans (14 oz. each) cut green bean, drained OR 2 (9 oz.) bags of frozen green beans, thawed 1 (10 oz.) can Campbell's cream of Mushroom soup 3/4 cup milk 1/4 teaspoon fresh black pepper 1-1/3 cups French's Fried Onions 1. In a medium mixing bowl add mushroom soup, black pepper and milk. Whisk until well blended. 2. Add drained green beans and 2/3 cup of French's fried onions to mushroom mixture. Fold with spatula until beans are well coated. 3. Pour into prepared baking dish. 4. Add additional 3/4 cup French's onions to top. 5. Bake in preheated oven for 15 minutes. Link to Homemade PIE CRUST: http://youtu.be/j5DARcyiiM4 PECAN PIE RECIPE Preheat oven to 425 F. 1 - 9" pie crust, unbaked 1 cup pecans, broken 1 cup corn syrup 4 eggs, slightly beaten 1/4 cup butter, melted 2/3 cup light brown sugar 1/4 teaspoon salt 1/2 teaspoon vanilla Add eggs to medium mixing bowl and slightly beat with whisk. Add brown sugar and corn syrup. Combine well. Add melted butter, salt and vanilla. Whisk well. With wooden spoon stir in pecan pieces. Place unbaked pie shell on baking sheet. Add Pecan Pie filling to pie crust. Bake at 425 degrees F. for 10 minutes. Reduce oven, do not open oven door, to 350 degrees F. and bake an additional 25-35 minutes. Cool on racks for 2-3 hours before serving. This Pecan Pie can be made 1 day in advance and stored in an airtight container. ENJOY!!!

This will become a family favorite once you give it a try. Deronda demonstrates for you how to make this easy yet perfectly tender CHUCK ROAST with added VEGETABLES during the last hour of baking. Recipe below... CHUCK ROAST with VEGETABLES Preheat oven to 325 degrees. Total cooking time 3 hours and 15 minutes. Ingredients... 5-6 lb Chuck Roast 1/4 cup all-purose flour 1 teaspoon salt 1/2 teaspoon fresh cracked pepper 2 large cloves garlic, peeled and sliced thinly 1/3 cup vegetable oil 1 large onion, sliced and separated into rings 5 large carrots, peeled and cut 4 large celery stems, rinsed and cut 5-6 medium potatoes, peeled, rinsed and cut in half Rinse and pat dry roast with paper towels. Make 4-5 small cuts in meat then add a thin slice of garlic in each, sprinkle with salt/pepper, lightly coat with flour. Heat oil in skillet on high heat. Add meat...sear until golden brown. Arrange half the sliced onion rings in a 13" by 9", or larger, baking pan lined with foil. Add the seared meat then top with remaining onion rings. Cover tightly and bake in preheated 325 degree oven for 2 hours and 15 minutes. Remove roast from oven and add prepared vegetables. Bake vegetables and meat together for 1 more hour. Allow chuck roast and vegetable to set for 10-15 minutes before serving. TIPS: Use leftover roast to make soups or sandwiches. Enjoy!!! -Deronda

A perfect entrée "BROWN SUGAR & HONEY GLAZED HAM" for special occasions like Mother's Day, Father's Day, Easter, Christmas, Thanksgiving, or any other day of the year. Click on "Show more" below for recipe... BROWN SUGAR & HONEY GLAZED BAKED HAM Arrange rack in lower third of oven. Preheat oven to 325 degrees F. 1 (10-pound) smoked, bone-in ham 1 cup honey 1/4 cup packed brown sugar 8 tablespoons unsalted butter 1. Remove plastic packaging or netting from the ham. Rise ham under running cool water. Pat dry with paper towels. 2. Trim away any excess fat from ham leaving about a 1/4-inch layer all over. Set ham aside to rest at room temperature for 30 minutes. 3. Line a sided baking sheet with heavy duty aluminum foil or several layer of regular aluminum foil (it will make clean up much easier). Place the ham, cut side down on baking sheet. Add 1/2 cup water around ham. Tightly cover ham with foil. 4. Bake 2 hours. 5. During last 15 minutes of cooking. In a small skillet or sauce pan, over medium heat, add the butter, brown sugar and honey. Stirring occasionally until brown sugar has dissolved, about 3-5 minutes. Set aside until lukewarm. 6. Remove ham from oven. Increase oven temperature to 425 degrees F. Remove foil from ham. Using a sharp knife score a 1-inch wide diamond pattern over the entire ham, Make sure not to cut more then 1/2-inch deep into ham. 7. Brush ham with a quarter of the honey glaze (about 1/4 cup), return to oven, bake uncovered for 15 minutes. Again remove ham from oven to brush with 1/4 cup of glaze and bake another 15 minutes. Perfectly FRIED OKRA to kick off the Fall Season!! Deronda demonstrates her original homemade FRIED OKRA recipe!! Tender OKRA slices with a golden crunch coating!! ADDICTIVE!! Never disappoints!! Click on SHOW MORE below for full recipe... 16- ounce package of fresh Okra Pods, rinsed, dried, and slices into 1/4" to 1/2" pieces. Set aside. 1-1/2 cups self-rising cornmeal 1/4 cup all-purpose flour 1/2 teaspoon kosher salt 1/4 teaspoon black pepper 1 cup whole buttermilk or milk 1 egg, slightly beaten 1 tablespoon water Vegetable oil for frying (Canola or Peanut oil maybe used) 1. In a medium mixing bowl; add buttermilk, egg & water. Whisk until well blended. Set aside. 2. Add cornmeal, flour, salt, & pepper to a 1-gallon plastic bag. Shake until dry ingredients are well blended. Set aside. 3. Submerge sliced Okra into buttermilk mixture. Soak for 5 minutes. 4. With slotted spoon remove 8-10 slices of okra, at a time, until well drain. Add okra pieces into cornmeal mixture. Shake until okra is well coated. Transfer okra to cooling rack. Continue until all the okra is coated. 5. In a 12"-skillet, over medium-heat, add vegetable oil until 1/2" deep. Heat oil to 375 degrees F. (If OKRA is frying too fast, remove your skillet off the heat & reduce heat to medium-low). An electric skillet or deep-fryer maybe used. Add 1 piece of coated okra to oil. If oil sizzles around the edges of okra continue to add okra. Be sure not to over crowd your okra. Fry okra until golden in color. 6. Drain fried Okra on paper towels. 7. Serve warm. Add your favorite dip(s), if you wish!! TIPS: Keep FRIED OKRA warm in an 175 degrees F. oven for up to 30 minutes. JOIN ME ON... I am sharing this recipe for my irresistible Buttermilk Cornbread that has been perfected, over the generations, by using hand-me-down cast iron skillets. The iron skillet I am using in this video was given to me, by my lovely Grandmother, many years ago. She told me that I must share the love of iron skillet cornbread with my new born son (at the time) and the people I will meet as he grows. Recipe below... BUTTERMILK CORNBREAD from an IRON SKILLET Preheat oven to 450 degrees. Add 1 Tablespoon of vegetable oil to a 6-inch iron skillet and put in oven for seven minutes. In mixing bowl add... 1 cup self-rising buttermilk corn meal mix 1/2 cup buttermilk 1/3 cup whole milk 2 Tablespoons vegetable oil Mix well. Remove hot iron skillet from oven and add cornbread mixture. Bake 15-20 minutes or until golden brown. Remove cornbread from skillet immediately and serve. After my son & his wife returned back to American, from honeymooning is GREECE, they shared their authentic GREEK SALAD eating experience with me & taught me now to make GREEK SALAD (just like the Greek do)!! Thanks to the honeymooners...I have mastered the perfectly traditional GREEK SALAD that is now a family favorite!! This healthy delicious GREEK SALAD, also know as HORIATIKI SALATA...is loaded with ripe tomatoes, cubes of cucumber, soaked slices of red onions, plump juicy kalamata olives, feta cheese, fresh lemon juice, drizzles of olive oil, and seasoned with oregano & pepper. Traditional GREEK SALAD 1 large cucumber, seeded & cubed 4 large roma tomatoes, cubed 1 medium red onion, sliced thinly, soaked in ice water for 10 minutes, and drained (this makes the onion sweet) 1/4-1/2 cup Fresh Italian Parsley, roughly chopped 1 cup (4 oz) Feta Cheese 1/4 cup Kalamata Olives, leave whole or half 1/4 cup olive oil 1 Fresh Lemon Juice 1 teaspoon oregano 1/2 teaspoon fresh cracked black pepper 1. Deronda demonstrates how to make delicious OLD FASHIONED CAKE DOUGHNUTS in this video! This doughnut is slightly crispy on the outside yet light and fluffy on the inside. A doughnut that will make you go YUM YUM YUM!!! Click "Show more" below to get recipe... OLD FASHIONED CAKE DOUGHNUTS 4 cups all-purpose flour, plus extra for rolling dough out 1 cup sugar 4 teaspoons baking powder 1 1/2 teaspoon salt 1/2 teaspoon nutmeg 1 cup buttermilk or milk 1/4 cup butter, melted 2 eggs 3-4 cup vegetable oil, used for frying doughnuts 1. In a large mixing bowl add sugar, baking powder. salt and nutmeg. Whisk well. 2. Add melted butter, eggs and buttermilk to sugar mixture and mix until combined. 3. Add 3 cups of flour to wet mixture, beat until blended. Add 1 cup of additional flour. Combine with wooden spoon until well blended. Dough should be sticky but firm to handle. Add 1/2 cup or more of flour it needed. 4. Cover dough with plastic wrap and refrigerate for 1 hour or more. 5.Add oil to 10 inch skillet and heat over medium heat until temp on oil reaches 365 degrees F. 6. Remove half the dough from refrigerate and roll out 1/2 inch thick. Cut dough into doughnut shapes by sing a 3 inch round circle. Use a 1" circle to make and remove doughnut center. 7. Add doughnuts and centers to hot oil, be sure not to over crowd, Fry for 2 1/2 minutes, flip and fry 1 more minute or until doughnuts are light and golden brown. 8. Remove doughnuts from oil and drain on paper towels. Cool 9. Glaze doughnuts, toss in sugar & cinnamon or powder sugar. Frost doughnuts and add sprinkles if desire. GLAZE FOR DOUGHNUTS 2 cups Powder Sugar 1/2 teaspoon pure vanilla extract 1/2 teaspoon honey 3-5 tablespoons of water Add powder sugar, honey and vanilla into a deep mixing bowl. Add water, 1 tablespoon at a time, until glaze will coat doughnuts. SUGAR & CINNAMON COATING FOR DOUGHNUTS 1/2 cup sugar 1 teaspoon cinnamon Toss sugar and cinnamon well together. Gently toss doughnuts. ENJOY!!

SOUP'S ON...loaded with flavors that make this CLASSIC VEGETALBE SOUP an all time favorite. A healthy and hearty dish that is sure to warm the soul and put a smile on your face. VEGETABLE SOUP 2 cup potatoes, peeled, rinsed and cubed 1 cup carrots, sliced 1 cup celery, sliced 1 cup onions, diced 1 cup corn, drained 1 cup lima beans, drained 1 cup fire roasted tomatoes 1 cup broth, vegetable or chicken 2 cup tomato juice 2 teaspoons vegetable oil 2 teaspoons salt 1/2 teaspoon fresh cracked pepper In a large Dutch oven or heavy sauce pan, over medium heat, add oil. Add carrots, celery and onions to heated oil. Sautee for 6-8 minutes or until vegetables are lightly golden brown around edges. Add potatoes, broth, fire roasted tomatoes, tomato juice, salt and pepper. Bring to a boil, turn down heat to medium low and cook for the next 20-30 minutes or until potatoes are tender, Check potatoes by using a fork. Add corn and lima beans. Bring to a boil and simmer for 10 minutes. Addition broth or water maybe add to thin liquid in soup if desired. ENJOY!! TIPS: Store soup in airtight container for up to 3 days in refrigerator.

It's that time of the year again...for making an old fashioned delicious YELLOW SQUASH CASSEROLE. Loaded with seasonal fresh yellow squash, sautéed onions, cheeses, panko crumbs and sour cream. This is an irresistible win-win side dish for any main entrée or just by itself. Click on "Show more" below to get full recipe... YELLOW SQUASH CASSEROLE Preheat oven to 350 degrees F. 4 cup fresh yellow squash, cubed 1/2 cup onions, diced 1/2 cup mozzarella cheese, shredded 1/2 cup cheddar cheese, shredded 1/2 cup sour cream 3 tablespoons panko bread crumb 1 tablespoon butter 1 egg 1/2 teaspoon fresh cracked black pepper 1/2 teaspoon kosher salt Add cubed yellow squash into a medium cooking pan with 1 cup of water. Cook on medium low heat for 15- 20 minutes. Drain cooked squash for water. Set aside. Sautee onions with butter in a small skillet for 8-10 minutes. Set aside. In a medium mixing bowl add egg (beat with fork), shredded cheeses, sour cream, panko crumbs, salt and pepper. Combine well. Add cooked and drained squash and sautéed onions. Stir. Add yellow squash mixture to a well greased 9" by 9" baking pan. Bake for 30-35 minutes. Serve. ENJOY!!! -Deronda :)

Old Fashioned Fried Apple Pies from a Cast Iron skillet...just like the ones Grandma makes!! I'm sharing this recipe from memory by watching both my Grandmothers make these while I was growing up. If you love Apple Pie...this will not disappoint!! Click on "Show more" before for recipe... OLD FASHIONED FRIED APPLE PIES from a IRON SKILLET 4-5 cups apples peels, seeded & cubed 1/2 cup sugar 1/2 teaspoon cinnamon 1 tablespoon butter 1 tablespoon water Cook apples, sugar, cinnamon, butter and water together in a large non-stick skillet, over medium-heat, for 15 minutes. Stirring occasionally. Remove from heat. Cool completely. PIE DOUGH 1 1/4 cups self-rising flour 1/2 cup buttermilk 1/4 cup all-vegetable shortening 1 egg 1. In a medium mixing bowl add flour. Cut shortening into flour with a fork or a pastry tool. 2. With fork, beat egg into buttermilk. 3. Make a well in the center of flour mixture. Add buttermilk mixture. Using fork...pull dry ingredients into the wet ingredients until blended. 4. Make dough into a large ball...place onto lightly floured surface. Cut dough into 4 equal parts. Cut each quart in half making 8 pieces of dough. 5. Roll each of the eight pieces of dough into 6" circles. 6. Add about 2 tablespoons of cooled apple filling onto each dough circle. Fold dough over apple filling to look like a half moon shape. Lightly dampen edge of inside dough with water to help ends seal. Use fork to seal edges together. 7. In a 12" cast iron skillet...add 3/4 cups vegetable/canola oil. Heat over medium-low heat. Add only two pie at a time to hot oil. Cook 2 minutes on each side or until golden. Drain on cooling racks. Sprinkle with sugar & cinnamon mixture (1 teaspoons cinnamon & 4 teaspoons sugar) immediately after removing pies from oil. Makes 8 Fried Apple Pies ENJOY!! GOULASH 1 LB. lean ground meat 1 cup onions, chopped 1/2 cup green bell pepper, chopped (optional) 1 teaspoon garlic, minced 1 (15 OZ.) can diced tomatoes 1 (15 OZ.) can tomato sauce 3 tablespoon tomato paste 1-1/2 cup water 2 teaspoons dried oregano 1 teaspoons Paprike 2 teaspoon kosher salt Pinch Crushed Red Pepper 1 bay leaf 2 teaspoons Worcestershire sauce 1 cup (wheat or white) pasta Colby Jack shredded cheese for topping GOULASH, optional 1. In a 5-6 quart Dutch oven, or heavy sauce, over medium heat, add ground beef. Cook until meat is lightly brown with a little pink still showing. 2. Add onions & green bell pepper. Set aside. 2 cups chicken broth 1 cup onions, chopped 1 cup celery, chopped 1/4 cup butter 1 teaspoon poultry seasoning 1/4 teaspoon kosher salt 1/4 teaspoon fresh ground black pepper 1 (12 oz) bag Cubed Bread 1 tablespoon fresh parsley, optional 1. In a 4-quart sauce pan. over medium heat, add butter, onions and celery. Sauté for 6-7 minutes, stirring occasionally. 2. Add chicken broth and seasoning. Stir. Heat until chicken broth is warm, but not boiling. Remove from heat. 3. Add package of bread cubes to heated chicken broth mixture. Stir until all ingredients are well incorporate. 4. A perfect PUFFED BREAD ROLLS for dipping in stews, soups, or eating at breakfast with eggs, butter, jellies, or jams!! Recipe below by clicking on SHOW MORE... Use a popover tin, or 12-cup muffin pan. 1 cup whole milk, room temperature 3 whole eggs, room temperature 1 cup all-purpose flour 1/2 teaspoon salt 2 tablespoons vegetable oil 1. Add 1 teaspoon of oil into the bottom of each popover tin, or 1/2 teaspoon of oil into the bottom of each muffin pan. Place popover pan on cookie sheet. In a heavy sauce pan add... 4 eggs, or more Cover eggs with cold tap water. Place on store top and bring to a boil on high-heat. Boil eggs for one (1) minute. Remove pan from heat. Cover with tight fitting pan lid for twenty (20) minutes. After 20 minutes pour hot water off eggs. Rinse and cover eggs with cool tap water (this will stop the eggs from cooking more) while tranferring to a dry towel. To remove egg from shell... Tap to crack the egg on a hard surface several times. Roll egg back and forth in the palm of your hands or on a flat surface to loosen egg from its shell. Slowly peel shell from egg. In a 13" by 9" baking dish/pan add carrots, celery, and onions. Toss with 1 tablespoon vegetable oil, 1 teaspoon salt, 1/2 teaspoon pepper, and 1/2 teaspoon dried thyme. 2. Snuggle turkey breast into the prepared vegetables. 3. Rub remaining oil over the turkey breast skin. Sprinkle with remaining salt, pepper, and thyme (thyme is optional). 4. Bake turkey on middle oven rack. Add 1/2 cup water to vegetables only, before baking. 5. Bake until meat thermometer reaches 165 degrees F. It is recommend that you check the internal temperature of the turkey in the thickest part of the breast with a food thermometer. An unstuffed turkey, in the weight of 8 to 12 pounds, bake in 2-3/4 to 3 hours. 6. Remove Turkey from oven. Transfer turkey to plater. Let set for 30 minutes before cutting into the turkey. Use the carrot, celery, onion, and turkey drippings to make gravy (recipe below). TURKEY GRAVY 2 cups of Drippings from baked turkey 2 tablespoons all-purpose flour 1/2 cup evaporated milk or whole milk 1. Drain vegetables through sieve. Discard vegetables. Refrigerate turkey dripping, covered, until fat is solid on top of drippings. 2. Remove fat from top of turkey dripping. Discard fat. 3. Whisk together the flour & milk in a 1-cup measuring cup. 4. Add drippings to a 12-inch skillet, or 2-quart sauce pan. Bring to a boil over medium-heat. 5. Whisk in a little milk mixture, at a time, until you reach the desired thickness of your gravy. Serve " WALDORF SALAD" as a scrumptious appetizer or a light meal. This apple, celery & walnut, dressed in mayonnaise, dish was first presented at the New York City famous Waldorf Astoria Hotel in the late 1800's. American's & the BIG APPLE are still eating it today. Click on "Show more" below for this recipe... 15 minutes to make CLASSIC WALDORF SALAD 1-2 apples, red-skinned, sweet & crunchy 1/2 cup celery, thinly sliced 1/2 cup grapes, sliced in half (substitute w/ 1/4 cup raisins) 1/2 cup walnuts, slightly toasted (substitute w/ pecans or almonds) 3 tablespoons mayonnaise (substitute w/ yogurt or sour cream) 1 tablespoon fresh lemon juice 1/4 teaspoon kosher salt & fresh cracked black pepper Fresh Lettuce In a large mixing bowl add diced apples and toss with fresh lemon juice. Evenly add chopped pecan to bottom of prepare cake pan. Set aside. 2. In large mixing bowl add next 6 ingredients. With hand mixer beat on medium-high for 2-3 minutes. Pour cake batter evenly over chopped nuts. 3. Bake for 1 hour. Cool cake 10 minutes on cooling rack. Loosen cake from pan. Turn cake upside down onto serving dish. 4. With a wooden skewer add holes into top of cake (about 75). Set aside. Rum Glaze 1 cup sugar 1/2 cup rum 1/4 cup butter 1/4 cup water 1. Add 4 ingredients into a small sauce pan over medium-heat. Bring to a boil. Boil 5 minutes. Remove from heat. 2. With a spoon...slowly add rum glaze to top of cake until cake has absorbed all the rum glaze. Refrigerate up to 1 month in airtight container. PAN SEARED SALMON W/ LEMON BUTTER SAUCE 1 - 6 ounce Salmon Filet, rinsed & pat dried 1 tablespoon vegetable oil 1/4 cup white wine Juice of 1/2 a fresh lemon 1/4 teaspoon fresh garlic, minced 1/2 teaspoon shallot, minced 1/4 teaspoon dill weed, dried 1/4 teaspoon basil, dried 2 tablespoons unsalted butter, cubed & chilled Kosher Salt & Fresh Cracked Pepper to taste 1. Lightly salt and pepper salmon filet. Set aside. 2. Heat a 12-inch frying pan, over medium-heat, until hot. Add oil. Gently, place seasoned Salmon Filet (skin side up) in pan. A family favorite...fresh "Spicy Crisp Chicken Sandwiches"...made at home!!! Recipe below by clicking on "Show more".... Spicy Crisp Fried Chicken 4 Chicken Breast, thinly sliced 1 bottle of hot sauce, your choice 1/2 cup all-flour 1/4 teaspoon pepper 1 teaspoon salt Vegetable oil for frying Chicken. Add enough oil to skillet that will reach half way up the sides of chicken fillets when frying. 1. Pour hot sauce over chicken breast, cover and refrigerate for one hour. Chicken may marinate more or over night. 2. Add flour, salt and pepper to dish. Drench each chicken breast until well coated. 3. In a heavy skillet heat oil to 375 degrees (medium heat). Libby's PUMPKIN ROLL (Makes 10 servings) 3/4 cup all-purpose flour 1/2 teaspoon baking powder 1/2 teaspoon baking soda 1/2 teaspoon ground cinnamon 1/2 teaspoon cloves 1/4 teaspoon salt 3 eggs 1 cup granulated sugar 2/3 cup LIBBY'S 100% Pure Pumpkin 1 cup chopped walnuts (optional) FILLING 1 pkg. (8 oz.) cream cheese at room temperature 1 cup powdered sugar 6 Tablespoons butter or margarine, softened 1 teaspoon vanilla extract More Powdered Sugar (optional) for sifting on top of towel & PUMPKIN ROLL FOR CAKE Preheat oven to 375 degrees F. Grease 15 by 10-inch jelly roll pan; line with wax paper. Grease and flour paper. Sprinkle a thin cotton kitchen towel with powdered sugar. (I did not sprinkle my towel with powdered sugar). COMBINE flour, baking powder, baking soda, cinnamon, cloves and salt in small bowl. Set aside. Beat eggs and granulated sugar in large mixer bowl until thick. Beat in pumpkin. Stir in flour mixture. Spread evenly into prepare baking pan. Sprinkle with nuts. BAKE for 13-15 minutes or until top of cake springs back when touched. (If using a dark colored pan begin checking for doneness at 11 minutes.) Immediately loosen and turn cake onto prepared towel. Carefully peel off paper. Roll up cake and towel together, starting with narrow end. Cool on wire rack. FOR FILLING BEAT cream cheese, 1 cup powdered sugar, butter, and vanilla extract in a small mixer bowl until smooth. Carefully unroll cake. Spread cream cheese mixture over cake. Errol cake. Wrap in plastic wrap and refrigerate at least one hour. Sprinkle with powdered sugar, if desired. Looking to make more then 1 pumpkin roll? The above recipe can easily be doubled (triple is not recommended). Once doubled 2 -1/2 cups cake batter will be needed for each prepared jelly-roll pan, 1-3/4 cups filling for each roll. PEANUT BRITTLE 3 cups shelled raw peanuts 3 cups sugar 1 cup light corn syrup 1/2 cup water 1/2 cup butter (1 stick), cute in small cubes 1 teaspoon baking soda 1 teaspoon pure vanilla extract 1/2 teaspoon kosher salt 1. Butter a 12" by 16" baking pan with sides. Set aside. 2. In a heavy bottom 4-quart sauce pan, over medium-heat, add sugar, corn syrup and water. Bring mixture a boil, attach candy thermometer, continue to stir (large wooden spoon works best for stirring) until thermometer reaches 240 degrees F. (7-8 minutes). Stir in peanuts and continue cooking and stirring until candy thermometer reaches 295 degrees F. (an additional 13-14 minutes). 3. Remove from heat (CAUTION...VERY HOY) and immediately add cubed butter, salt, soda and vanilla. Stir until butter has melted into hot mixture (1 minutes), quickly pour the brittle in prepared buttered baking pan. Spread out corner to corner with back of spoon. Cool on cooling rack (about 1 hour). 4. When brittle is completely cooled, break candy into desired pieces. TIPS: Store in an airtight container. Will keep up to 1 month or longer. ENJOY!!

BLONDIE BROWNIES Butter or grease a 9" by 9" baking dish. Set aside. Preheat over to 350 degrees F 1 cup all-purpose flour 1/8 teaspoon baking soda 1/2 teaspoon salt 1/3 cup butter 1 cup packed light brown sugar 1 egg 1 teaspoon vanilla extract 1 1/2 cup milk chocolate chip or your favorite chips 1/2 cup walnuts, chopped 1. In a medium mixing bowl add flour, baking soda and salt. Whisk well. Add chocolate chips and walnuts. Toss together well. 2. In a medium sauce pan, over medium-heat, melt butter. Add brown sugar. Stir until smooth and well blended. Remove from heat. Allow to cool. 3. Add egg and vanilla to mixing bowl. Whisk slightly with fork. Whisk in cooled brown sugar mixture. STUFFED BELL PEPPERS...you're gonna just love!! Multi-Colored bell peppers (use green if you wish) stuffed with freshly lean ground beef, grated parmesan cheese, marinara sauce, rice, seasonings and baked with a bubbly mozzarella topping!! click on "SHOW MORE" below for recipe... STUFFED BELL PEPPERS Preheat oven to 375 degrees F. 4 regular sized bell peppers, multi-colored or green 2 tablespoons olive oil 2 tablespoons carrots, diced 2 tablespoons onions, diced 2 tablespoons celery, diced 1 pound lean ground beef 1/2 to 1 cup rice, cooked 1-1/2 cup marinara sauce 1/2 cup parmesan cheese, grated 1/2 cup mozzarella cheese, grated 2 tablespoons heavy cream 1/4 cup water salt & pepper to flavor 1. In a large skillet, over medium-heat, saute onions, carrots, celery in 1 tablespoon olive oil for 5 minutes. Add ground beef, season with salt and pepper, cook (continue to stir while breaking up meat) for 4 minutes. 2. Add marinara sauce, rice, cream and parmesan cheese. Stir until bubbly. Remove from heat. 3. Cute each bell pepper in half. Remove seeds and ribs with spoon. Place each bell pepper half into a 13" by 9" baking pan. Stuff each pepper half with meat mixture. Top with grated mozzarella cheese. Drizzle remaining olive oil over stuff bell peppers. Add water to bottom of pan, making sure not to get water in stuffed peppers. Water will help pepper steam while baking. 4. Remove from oven. Cools 5 minutes before serving!! ENJOY!!

In a large mixing bowl. Combine chicken, corn and green onions. Toss well. Set aside. 2. In a medium bowl. HOMEMADE FAMOUS PIE CRUST 1 cup all-purpose flour 1/2 teaspoon salt 6 Tablespoons chilled vegetable shortening 4-6 Tablespoons ice cold water In mixing bowl add flour and salt. Cut in three tablespoons of chilled vegetable shortening until mixture has the texture of cornmeal. Cut in the last three tablespoons of vegetable shortening until mixture has the texture of small peas. Add one tablespoon, at a time, of ice cold water until mixture forms a dough ball. Roll out dough on floured surface until it is large enough to fit an eight or nine inch pie pan. Flute edges of pie dough. Bake pie shell in a preheated 350 degree oven for 18-24 minutes or until golden brown. Note: Follow directions for a baked or unbaked pie crust for your choice of pie filling. Mimic RED LOBSTER CHADDER CHEESE BISCUITS Preheat oven to 450 degrees F. 2 cups all-purpose flour 3 teaspoon baking powder 1/2 teaspoon salt 1/4 teaspoon baking soda 1/4 cup shortening, butter flavor 1/3 cup shredded cheddar cheese 3/4 cup buttermilk In a large mixing bowl whisk together flour, baking powder, baking soda and salt. Cut shortening into dry ingredients, blend well. Add cheddar cheese and blend well. Make a well in the middle of shortening mixture. Add buttermilk and mix until all ingredient a well combine. Using a spoon, drop biscuit dough onto cookie sheet. Bake 8-12 minutes or until golden brown. Topping for baked Biscuits 2 tablespoon butter, melted 1/4 teaspoon garlic powder 1/2 teaspoon parsley flakes Brush each biscuit with butter mixture after removing from oven. Makes 10-12 biscuits Serve immediately. Warm biscuits in microwave for 5 second at a time. Biscuits may also be warmed in a preheat 250 degree oven, tightly wrapped in foil, for 15-20 minutes. Batter will be thin. Set aside. 3. In medium sauce pan over medium-heat add peaches, 1/2 cup sugar, cinnamon & nutmeg. Stir until peaches almost boil. Remove from heat. Set aside. 4. Remove baking dish with melted butter from over. Pour thin batter over melted butter. Immediately spoon hot peaches over thin batter & butter evenly. ~DO NOT STIR~ 5. Bake 55 - 65 minutes.
